I make an artichoke dip is incredibly simple and people rave over it:
  • Canned artichoke hearts (1 or 2, depending on amount desired - not the marinated kind)
  • Mayonnaise
  • diced jalapenos to taste (fresh or canned)
  • Freshly grated parmesan

I smash the artichoke hearts with a fork, mix in enough mayo until the texture is right, add several diced jalapeno rings to taste(I just use jarred) and add a bunch of parmesan, both mixed in and again on top. It can be heated in the oven or microwaved, and served with sliced baguette, crackers, or whatever you have on hand.
