Thanks everyone for your replies, now I'm confused, all the recipes sound so good I'm not sure which one to try! Company Mac and Cheese
1 package (7oz) elbow macaroni
6 tablespoons butter or margarine (divided)
3 tablespoons all-purpose flour
2 cups milk
1 package (8oz) cream cheese, cubed (smaller the better so it melts better)
2 cups (8 oz) shredded cheddar cheese
2 teaspoons spicy brown mustard (this is optional imo)
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup dry bread crumbs (I don't use this)
2 tablespoons minced fresh parsley (I don't use this)
Cook macaroni according to package directions. Meanwhile, melt 4 T butter in a large saucepan. Stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes. Reduce heat; add cheeses, mustard (optional), salt and pepper. Stir until cheese is melted and sauce is smooth. Drain macaroni and add to the cheese sauce and stir to coat. Transfer to a greased shallow 3qt baking dish. Melt the remaining butter; toss with bread crumbs and parley. Sprinkle over macaroni. Bake, uncovered, at 400 degrees for 15-20 minutes or until golden brown. Yield: 6-8 servings. (When I double it I use a lasagna pan and it fits well).
