I butterfly mine and rub it with chopped garlic, salt,pepper, then I take a piece of spicey sausage like Chorizo or linguica and lay the links length wise in the roast then close it up and tie it together then I chopped another 2 cloves of garlic and rub it on the outside with salt,pepper and put it in a reynolds cooking bag with some carrots and potatos and cook it at 325 for about 2 hours. Comes out yummy. When you slice into it the sausage is in the center of the meat and gives it great flavor.
