do you make muffins?

I make muffins alot and freeze them for the days we want them! since there is just the 2 of us they get stale fast if I don't put them in the freezer!
heres a couple of the newest ones we really like!

Raw Apple Muffins

4 cups peeled and diced apples(I used fuji)
1 cup sugar(I use splenda)
2 eggs
1/2 cup vegetable oil(I use half oil and half plain yogurt)
2 teaspoons vanilla
2 cups flour
2 teaspoons baking soda
1 tablespoon cinnamon
1 teaspoon nutmeg
1 cup raisins
1 cup chopped walnuts

spray 16 muffin tins with pam

mix together all the dry ingredients in one bowl and all the rest in another bowl, then mix the dry mixture into the wet just enough to blend, don't over mix!
use your icecream scoop to fill muffin tins to the top, these don't raise a whole lot! bake on 325 for 25 to 30 minutes!
these are really moist yummy muffins

peanutbutter, banana, chocolate chip muffins

1 3/4 cup flour
2/3 cup sugar(I use 1/2 cup splenda)
2 tsp baking powder
1/2 tsp salt
1 cup plain yogurt
2 lg or 3 small ripe bananas
2 eggs
1 cup peanutbutter(I like chunky)
1/2 cup chocolate chips

heat oven to 350
in a lg bowl combine the bananas, eggs, yogurt and peanut butter until throughly combined.
in another bowl combine all of the dry ingredients then mix the dry ingredients and the chocolate chips into the wet until they are just combined, do not over mix!
scoop into 12 muffin tins that have been sprayed with pam bake approx. 30 minutes untill tops spring back when touched.
