| Buttermilk Oatmeal Muffins
Sorry, my first attempt messed up. Not very good at this.
To start again:
1 cup quick-cooking oats
1 cup buttermilk
1 egg, beaten
1/2 cup packed brown sugar
1/4 cup vegetable oil
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Soak oats in buttermilk for 15 minutes. Stir in egg, sugar and oil. Combine flour, baking powder, baking soda and salt; stir into oat misture just until moistened. Filled greased or paper-lined muffin cups three-fourths full. Bake at 400 degrees for 16-18 minutes or until muffins test done.
I prefer to get creative with these muffins and add a little cinnamon, nuts and raisins or craisins. Just discovered craisins and they are wonderful. Makes for a very healthy snack.
