Puerto Rican Style Pork Roast

1 (2 or 3 Lb.) Pork Roast
3 cloves garlic, peeled
Adobo seasoning
1/4 to 1/3 cup lemon juice

Make 3 slits in top of pork roast, Place a garlic clove in each. Sprinkle roast with Adobo seasoning. Pour lemon juice over top. Place in a roasting pan that has been sprayed with PAM and roast at 350 for 2-3 hours or till done.

My mom's goulash...I don't have actual measurements, we just kind of adjust according to how many it needs to feed....

slice smoked sausage, chop some green bell pepper. Brown sausage with bell peper. Cook and drain some elbow macaroni. Mix all together, add spaghetti sauce-we actually like this best with cheapo cans of traditional flavor Del Monte spaghetti sauce, but use whatever, homemade, jarred, whatever kind you want). Just make sure you put enough sauce in so it doesn't get dry. Heat through. This is good fresh, but even better as leftovers the next day!

Easy Mexican Chili
Hamburger browned and drained

1 can of each
Black Beans (drained)
Beef Broth
Refried Beans
1 jar of salsa
I also add kidney beans
Put everything in a large pot and heat
Tastes like "next day" chili


If you like chicken use all of the above ingredients, substitute chicken for hamburger and chicken broth for beef broth

1 beef brisket
1 package dry onion soup mix
yellow mustard

Put the brisket in a crockpot and squirt yellow mustard all over the top of it and then sprinkle the dry onion soup mix over the top of the mustard - cook all day on low. This is very tender and delicious.

Orange Chicken
Make your plain white rice. Then brown some chicken (you can add onions, but nothing else). Throw some Orange conserve or orange marmalade on the chicken, turn down heat for about 5 minutes, add rice for another 5 minutes.

This looks and tastes like something fancy you would find in a restaurant. It takes about 20-30 minutes all together with cutting up the chicken and steaming the rice.

Someone on this forum last year posted a crockpot recipe that has made it into our regular rotation. The only change I made is to make it with Hot link as we like things a little spicier than the average bear. Here it is:

Easy Bean Chowder

2 cans Northern Beans
1 can Butter Beans
1 can potatoes, diced into small cubes
1 can carrots, diced into small cubes
I cup chicken broth (made with bullion, or base)
1 tsp minced onions
1/4 cup chopped celery (optional)
1 cup diced smoked sausage, ham, or kielbasa
salt and pepper to taste

I turn it to low and cook it all day. If it was a Saturday, I cooked it on
high for about 3 hours. When it was done, I served it over fried cornbread.
Sometimes, I had a nice cold bowl of cole slaw, the chowder and the slaw
paired well with the different textures

Meatball Stroganoff
healthy substitutions
1 pkg frozen pre-cooked meatballs (turkey or Bocca meatballs)
1 can cream of mushroom soup (“Healthy Request)
1 pkg broad noodles (Whole Wheat)

Pour soup into microwavable casserole dish; add about 1/3 soupcan of water; stir to combine.
Add frozen or thawed pre-cooked meatballs. Stir meatballs to combine with soup mixture.
Cover with waxed paper, microwave about 3 minutes or according to pkg directions; or till heated thru.

Meanwhile, boil noodles till done; drain. Add meatballs & soup mixture, stirring to combine
in large pot or Dutch oven.

NOTE: You could embellish this dish, if you prefer, by mixing in sour cream in place
of water & a dash of paprika to soup mixture, &/or adding snipped fresh Italian flat-leaf
parsley or onion or garlic powder.

This dish is great on it's own; & I would serve it as a company dish as well. Now you have
lots of time to make a fantastic dessert (i.e.pudding or ice cream parfaits) & a yummy salad.
Maybe even serve w some foccacia, baked rolls or garlic bread.

salmon quiche

1 frozen pie crust in the pan
1 can cream of mushroom soup
1 15 oz can salmon (drained and cleaned of skin and bones, this is really easy)
3 eggs beaten
1/2 cup parmessan cheese

mix soup,salmon, eggs and parmessan together and pour into crust bake @ 350 for 45 min or until knife comes out clean

lately its been microwave lasagna...
my family goes nuts and its soooooo easy!

I take my tupperware microwave cooker
put a layer of cooked bowtie pasta in,
cover with spaghetti sauce,
layer with cottage cheese and mozzerella
then top with mozzerella cheese and cook in the microwave for only 6 minutes!
They think I have worked really really hard to get this made

TASTES SOOOOOOO YUMMMY!
I can come home from work and still have way enough time to put it together and toast some garlic bread to go with it

Shredded Chicken Sandwiches

This makes 4-6 sandwiches depending on size of bread you use.
1-2 cups shredded cooked chicken
1 1/2 cups shredded cheddar cheese
10 slices thick bread (I use hoagie rolls)
1 tsp garlic salt 1 cup mayonnaise-NOT salad dressing
1-2 tomatoes sliced
You can also add red/green bell peppers sliced if you like them.

In small bowl mix chicken, 3/4 cup of the cheese,garlic salt and mayonnaise. Spread on bread. Top with tomato slices, sprinkle with remaining cheese. Cook on ungreased cookie sheet until toasted. 10-15 minutes bake time
