I do mine with bar-b-que sauce. I use a crock-pot and place a couple of boneless chicken breasts in with 2 sliced small onions and 1 sliced pepper or 2, then top it with about 1/3-1/2 bottle of bar-b-que sauce. If it seems a little too thick after it's been cooking a bit, I just add a splash of water. After the chicken is cooked and tender, I take out the breasts, shred them and put back into the crock pot. That way every bit of the chicken gets soaks up the sauce. I even add a splash of hot sauce to taste.
