I man a hot dog sale at a craft show every fall. We pre-cook, then keep the dogs warm in water in a crockpot. For the lunch rush, we put a bunch in buns, wrap in foil, and keep in a chafing dish, but that's for ones that will sell quickly. I think for your purposes, doing a few in a crockpot would work great. If you keep them too long (hours at a time), they do start to get a greenish cast, though!
