And as far as feeling sick on the top of Pikes Peak (or anywhere else high) I didn't feel it and I am sensitive to it. I was nervous about feeling it, but for me it was so crisp on the top (40 degrees) that I felt just fine. However, I do remember at one point it was extremely hard to climb a little hiking trail up some stairs. But I never felt sick or faintish.
Ditto - we also camped in CO and did all the things listed above. Estes Park is absolutely beautiful. Pikes Peak is incredible, Garden of the Gods is very interesting. We took a 2-hour horseback ride through Rocky Mountain National Park. That was a lot of fun. We never felt sick from the altitude, either.

One other thing I would add is lunch or dinner at Casa Bonita in Denver. The food isn't that great, but the atmosphere is a lot of fun. It's a Mexican restaurant, but it has Mariachi (sp?) Bands, cliff divers, arcade, all sorts of fun stuff.

I'd love to go back some day, but too many other 1sts to do before we start repeats!
