Nightflier - is your cilantro rice similar to what they have at Chipotle (assuming you have a Chipotle near you)? If so, how do you make it?

I am going to make a mexican-style casserole with lots of veggies - zucchini, black beans, tomatoes, corn, chilis, etc. It is yummy!
