Yes, we do have Chipotle here but I have no idea if this is even close to what they serve. I’m guessing
at the amounts, so you may want to adjust them to taste. A neighbor gave the second recipe to me but
I haven’t tried it yet. Do either look close to what you wanted?

1/3 cup vegetable oil
¼ cup fresh lime juice
salt and pepper to taste
¾ cup green bell pepper, diced
¾ cup red bell pepper, diced
1/3 cup scallions, thinly sliced
3 cups cooked long-grain white rice, room temperature
¼ cup fresh cilantro, minced

In a medium bowl, whisk the oil, juice, salt and pepper until well blended.
Stir in the green/red peppers and scallions. Add the rice and cilantro and
toss well to coat.


3 slices bacon, diced
½ medium yellow onion, chopped
1½ cups long grain rice
1½ (14½-ounce) cans chicken broth
¼ cup water
2 Chipotle chiles in adobe sauce, diced
salt to taste
fresh cilantro, chopped
green onions, chopped

In a large saucepan, sauté the bacon and onion about 4 minutes. Add the
rice and stir to coat well. Stir in the broth, water, chiles and salt. Bring to a
boil, cover, lower the heat, and simmer until the rice is tender and the liquid
is absorbed.

Transfer to a serving bowl and sprinkle with cilantro and green onions.
