Yes, they are very sharp -- we always make it a point to NEVER leave them in the sink -- we wash them immediately and put them away immediately so we have never, ever gotten cut on them.

DD actually sold CutCo when she was in college and did very well. They are expensive but they last forever. My SIL had a knife for over 20 years that finally got a small nick in it and they replaced it right away free of charge.
