It's hard for me to narrow my choice down to one recipe. Our family has several favorites that I bake every year. I will post a few for you. Here goes:
Chocolate Crinkles
1/2 c vegetable oil
3/4 c. baking cocoa
2 cups sugar
4 eggs
2 tsp. vanilla
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
powdered sugar - approx. 1/2 c.
Mix oil, chocolate and sugar together. Blend in eggs, mixing well. Add vanilla then stir in flour, baking powder and salt, mixing well. Chill several hours or even overnight. When ready to bake, preheat oven to 350 degrees. Drop teaspoonfuls of dough into powdered sugar. Roll in sugar and shape into balls. Place on greased baking sheet. Bake 10-12 minutes. Do Not Overbake. Makes about 6 dozen cookies.
White Chocolate Macadamia Nut Cookies
3 cups flour
1 tsp. baking soda
1 tsp. salt
1 cup melted butter, cooled slightly
2 cups white chocolate chips OR white chocolate chunks
1 cup coarsely chopped macadamia nuts
2/4 cup sugar
3/4 cup packed brown sugar
1 tsp. vanilla 2 eggs
Combine flour, baking soda and salt; set aside. In a large bowl combine butter, sugars, vanilla and beat in eggs. Add flour, baking soda and salt. Stir in white chocolate chips and macadamia nuts. Drop by rounded teaspoonful onto ungreased cookie sheet. Bake at 375 degrees for 8-10 minutes. Makes lots!
