Thought I'd share a dollar-stretching recipe! My recipe posted at this link IS for a contest, so this may seem self-serving, but it's such a great recipe I didn't wanna hold back in sharing it since I get such rave reviews when I make it! Only vote for it if you like it - and you will! It's a dollar-stretcher because you filet the chicken breast in half lengthwise, doubling the yield. It's the type of recipe you use to entertain, so it calls for a few more ingredients than some recipes, but it's still cheaper than going out to eat.
