Zucchini is The Name of This Game!

Did you know that Zucchini is a good source of vitamin C? Vitamin C is an antioxidant and some also say an anti-inflammatory. My grandma always claimed so, God bless her heart. She used to say, zucchini gave her some relief from her arthritis. I don't know how much scientific truth there is to that. I think it was an excuse she used because she loved zucchini so much.
My family and I lived downstairs from my grandma & grandpa when I was growing up, so what they ate, we ate. My grandpa grew TONS of zucchini in the garden during the growing season. Grandma used it in about any dish she could think of. If zucchini was the name, then zucchini was the game. Everyone in the family always enjoyed my Grandma's zucchini dishes. She wasn't a trained chef in any way, shape or form, but she was an excellent cook! Here is one of the zucchini dishes she used to make that everyone in the family loved... Italian zucchini pie. - 4 cups of slice zucchini
3/4 tsp. salt
1/2 tsp. pepper
2 Tbsp. parsley flakes
1 c. of chopped onions or shallots
1/4 tsp. oregano
1/4 tsp. dried basil
1.4 tsp. garlic powder
1/4 c. margarine
2 eggs beaten
2 cups mozzarella cheese, shredded
2 unbaked pie shells (9 inch)
