Does any one else celebrate Passover?

I am up to my armpits in vegetable kugel (kind of like a baked cassarole or pudding for those not familiar with it). I use an awesome recipie but it takes a lot of time and I am tripling it because I have both nights of the holiday here and then I am going down to MD to see my sister. She is a vegatarian so this is a great dish and it is really good and pretty too (three layers of vegetables).

I made one pot of soup that is cooling. I may make the second pot for Tuesday night tomrrow. I also have two stuffings to make along with everything else.

If you do celebrate Passover may you have a zesin Pesach.

I and my family are christians.....we do celebrate Passover in our own way.......We place a strip of red clothe over our doorway....most of the members of our church do this as well....we believe it was a miracle from G-D.

I would love to hear more about this veggie dish.........

I think that is lovely mrk11118. We are not orthodox but I do the whole Passover thing in my house. This was the holiday my mother made for our entire family (we went to other peoples homes for other holidays like my aunt and my grandma). It is also special because this is the first year without my mother in law being alive. I knew her for almost five years but she was sick most of the time and often in a home or hospital. She survived the concentration camps and I learned how to make a kitchen/home kosher for Passover to make sure she would feel at home when I cooked. Before meeting me my now husband would go to the local kosher supermarket and buy premade food which I am sure was very good but homeade is better My mother kept more of the spirit of the holiday then to the letter. Now that my mother in law is gone I have kept up a lot of it but working full time with a two year old makes it harder and we are not as observant but my brother in law is -- I paid $10 a pound for kosher meat today. I almost passed out (versus Passover lol) but it is important so I do it.

It takes much longer than the prep time noted but deffinately use the frozen broccoli and cauliflower if you do make it -- you won't notice the difference and it makes it much easier.

You can also check out some of my recipies I have shared. My mothers matzo balls are well known in these parts . . . It is recipie #162241 (you can do a search by just putting in the recipie number). I also make Mrs. Goldman's brisket (a family favorite (#162239), a sweet cherry/apple kugel (#162224), and an awseome stuffing that I was warry to try a few years ago but I was so glad I did. Folks were licking the pan (well almost) -- it is #162242. My chicken soup this year will be similar to the one I normally make but I added some things to follow recipie #94028. In addtion I will make the charoset (chopped apples, wine and honey) using #115406 as well as chopped liver -- another family favorite . . . This one is close to mine . . . #22420. Also some roasted asparagus (#214165 )

In addition to all of this we serve salted/chilled hard boiled eggs. My mother always did this. The egg is symbolic of life and the salt water for tears. They also taste super yummy when they have chilld in salt water overnight lol. Plus there were be gefilte fish and cranberry sauce. For dessert I found a frozen kosher for Passover (an parve meaning it can be eaten with milk or meat) tiramisu plus the jelly slices, marshmellow twists and some other odds and ends.

I am so happy I bought an apple peeler. Last year I hit a bottle of soda while using it and fried my laptop -- I keep it open to listen to klezmer music online and have my recipies up while I make them. This year I will be more careful

I would love to hear how others mark the holiday as Jews or otherwise. We always open up our table to our non-Jewish friends to share in our customs as they have been kind enough to open their homes to us -- especially at Christmas which is special to me as my mother was born on Christmas eve and she is gone now 12 years. We will head to MD on Friday to see my sister and spend Friday night at the tot sabbath services where my son can run around and sing and dance.

I am not Jewish, but I LOVE Jewish food, especially latkes, kugels, and matzo ball soup...
Growing up we had a neighbor/babysitter that made us all of these and more. I always envied her family, with the special silverware etc., and all of the holidays.

Good Pesach Maddy & Suz and anyone else.

Me, I don't cook even when it isn't Passover. I go to my cousin's for Sedar just on the 1st night.

I don't do anything for the 2nd night. The Temple (which I don't go to for services, but go to for a senior's group) has a Sedar on the 2nd night but I don't attend that.

Guess you can tell I'm not observant at all. Neither were my parents. But my grandparents were Orthodox. I won't tell you how many years they are gone.

I'm in Buck's Counry PA and my family is in NYand so I won't be able to get there in time. I will be making dinner for just my husband and daughter.

Going to my parents house this weekend for Brisket (tradition). I remember being a kid searching for the afikomin from my zayde.... With cousins. While DW stays home for preparation for Easter the next day

We go to my sisters' house tonight for first night - DH has been making the soup & matzo balls all morning. We also take the dessert & gefilte fish (pre-made - I won't mess with making that!)

I am the Mashgiah in a conservative synagogue, so Monday myself and 5 of the women who also work in the kitchen spent the day cleaning all the chometz out of the kitchen there. What fun!!

I don't clean my kitchen at home as well as we do it there.

I don't keep kosher at home; meat is very expensive (although I'm a vegetarian anyway).

I admire that you are keeping kosher for your BIL - at least for passover - it is an expensive holiday as it is.

I enjoy reading everyones comments. The first round of brisket is in the oven for the second cooking (I cook it for 2 hours, slice it and then put it back in after liquifying the veggies in the food processer), The soup is simmiering for its second round and I have started the soup for tomorrow night as well. I am roasting the egg on the open flame of my gas stove in some free Reynolds wrapper lol. The charoset is made now as well. I have to set up the gefilte fish tray -- I put it out on top of romaine lettuce and decorate it with a few round canned beets as my mother always did. The serving trays are washed now as well. Thank goodness my tabletop dishwasher replacement arrived before the holidays -- it is small but better than nothing and the original died while still under warrenty. I am using my 75% off Cascade from Target clearence at Christmas - $1/2 coupons lol.

I need to chill some salt water, make more hard boiled eggs for tomorrow, another brisket in the morning (veggies are all chopped and in free Ziploc containers), make the second sweet kugel (may do this in the morning), and clean the aspargus which I will be roasting this year for a new twist . . . so I just need to clean them.

Interesting - I've never heard of beets on the g. fish (we just do the traditional carrots)

We celebrate both, since my DH is Jewish. We actually celebrated Passover last night, since his mom could be here. Looking forward to tonight's leftovers!

Hi all, and Happy Pesach!

We celebrated a very nice 1st night, last night with DH's family (the only family nearby!). The menu consisted of baked chicken, brisket, stuffed cabbage, garlic broccoli, matzah ball soup, salad, and mashed potatoes. For dessert, we had a yummy orange sponge cake, that I make every year. It's always a hit! And, of course, what's a Seder without the traditional chocolates and gellies?!

Just wondering from those who are more knowledgeable than me... Is soy milk Parve? I have a chocolate cake recipe that I am experimenting with, which requires milk. I am thinking of using soymilk, if it is Parve.

Anyone who is Kosher, what do you substitute for milk in baking? Would you feel comfortable using soymilk?

I don't know about soy milk. But I do know that Mocha Mix can be used with meat dishes. The only reason I know the answer to that is when eating at the Cafe at the Museum of Tolerance, I was shocked that they had Mocha Mix to use in coffee thinking I would have to drink my coffee black. I asked my mother about that and she told me that Mocha Mix is not dairy.

And then one of my friends checked with her Rabbi when I was going to dinner at her Kosher house. And he concurred.

Hmm.... never heard of Mocha Mix, but now I am wondering if ALL non-dairy creamers, would be acceptable substitutes? I think I will take this discussion to the LGC Board.

We survived the first night and brisket #2 is in the oven. I have lots more dishes to clean but I got the boys out of the house at least for a bit. My stepson is here and he is a good boy (he is 11.5) but his mother is difficult and he has learned to handle disapointment from her which means everything blows up when he is not happy. Oy.

I checked into the soy milk thing. Per the Silk Soy Milk website their product is kosher but is made on dairy machines so it is a no go . . . If you check in the organic section of your supermarket their might be a parve soy milk but I don't know if it will be parked kosher for Passover. I have not had this issue . . . Sorry I can't be more helpful. You can check out the community forums at the recipie website I mentioned in my post with the recipies . . . If you go to the bottom of the page there is a link to community forums. Scroll down to the kosher one and post there . . . They are quite knowledgable and helpful.

I could use some shnapps right about now.

There are 2 non-dairy creamers that I use in my shul - Rich's and Kroger brand - both are non-dairy, found in the freezer section, however, I don't know if they are kosher for passover

Bevogal I forgot to mention . . . I just buy a can of pickled beets. Not sliced. I pur romaine lettuce on the bottom of the serving tray, put out the fish and then place a few of the beets around the plate for some color. I have a pretty horseraddish bowl I got a few years ago with a matching bowl for the charoset.

I hope everyone is having a good holiday. My second cherry apple kugel is almost done. I found if I freeze it even for a few hours before baking it has less of the loose consistancy and bakes more like a kugel and I can slice it.

man, you are baking up a storm!!

I just finished my first batch of passover rolls - seems like I make those everyday during Pesach , but, it makes things a bit more tolerable. (funny thing is, I really don't eat that much bread during the year, but I seem to need the rolls more during passover) .

Kineret (sp?) and Rich's I believe are free of all dairy.
