40 lbs chicken breast

We got a new warehouse/restaurant supply store. "Maine Source"....Never heard of it before, got a flyer and decided to check it out...
boneless skinless whole breast was 1.29 a lb, (you had to buy the 40lb box, bagged in 4 ten pound bags, and fresh, so easy to work with)...I pd 51 dollars for this box, cut into "tenders " about 5 lbs , added some ital salad dressing and froze for barbecuing over memorial day (we are camping with a bunch of folks). Then, I had 18 bags of chicken, mostly cut into strips (I left some whole for cordon bleu) for dinners. Not too shabby.
They also had butter for 1.49 lb, Land o lakes 5 lb sliced american cheese 9.99 and ground angus chuck 8 something for a 5 lb tube. I spent 107 dollars (also got twenty lbs of potatoes, 8 lbs bacon and 2 seedless watermelons)...not too shabby

My question is, what do you like to do with your chicken breast??
I like it grilled with the ital dressing marinade, and cut up on salad, home made breaded chickenn tenders and chicken parm....any other ideas??

Squeak, how do you make your fajitas?? I usually just mix with taco seasoning...
I was just thinking how much cheaper this chicken was than even hamburger, and better for you too

Teriyaki marinade is really good also, then grill the chix. I use soy sauce, brown sugar, garlic powder, pineapple juice. The original recipe called for1 cup of each, except the garlic. But that's way too sweet for me. I never measure it, just dump into a ziploc bag. And if I don't have the pineapple juice, I just use the other ingredients and it's still really good. I buy Korean soy sauce tho, not the Kikkoman or whatever as it's way too salty for me. If you do use that type, you may want to cut back just so it's not too salty. I also add black pepper and sometimes 5 spice powder which is good.

I also like to cook chicken, add some taco seasoning and a can of Rotel(diced tomatoes and green chiles), let it cook until it's fork tender, shred it and make nachos with it.

I love to make buffalo chicken sandwiches. I half a chicken breast, flour it, then shallow pan-fry in some olive oil. Then I dip in butter/Frank's Red Hot sauce. I put it on a toasted hoagie with lettuce and ranch or blue cheese dressing. Yum!

Last night I used the leftover chicken & sauce and made a buffalo chicken pizza topped with Colby Jack cheese. Delicious.

Tonight I'm grilling breasts that have been marinated in 1/3 bbq sauce, 1 tbsp honey, 2 cloves garlic, 1 tsp grated ginger, 1/4 cup mayo. Sounds weird, but it has really high ratings on recipezaar.

If you saute some chopped chicken breast in a little olive oil and then add some hot sauce to your liking. Then take that warm meat and put it on some chopped romaine lettuce, along with chopped celery, grape tomatos & a little blue cheese dressing. YUM - very healthy Buffalo Chicken Salad.

I usually use sliced onions and mild chilis FRESH ones! I don't like bell peppers so i use chilis instead then I add some garlic and some salsa and kind of stir fry it! then serve with tortillas, sour cream cheese and beans and rice on the side!

Blackened chicken

My kids would rather have blackened chicken than anything.
You can do a search for the 'real' recipe.
I have made it as simple as lowerys garlic salt, ground red pepper, black pepper, salt. Split chicken you have have thin pieces and fry in a hot pan with butter. I got this from the atkins recipe.

I grill it up lightly seasoned and then slice into thin slices. Then I vacuum seal it and freeze some and put some in the fridge. Great to pull out and put into last minute quesadillas, nachos, on top of salads or in a quick chowder or soup. I'll also nibble on them with cheese and crackers for lunch.

enchiladas
freeze with various marinades: terriyaki, lemon pepper, ginger garlic, hickory smoke flavor
chicken nuggets and skewers they are yummy with crushed flavored potato chips instead of bread crumbs or cornflakes too!
Chicken chili ( I have a "soup nazi" recipe that is really good but time confusing)
baked with ranch salad dressing, chedder cheese and terriyaki sauce on top and throw some onion straws on there (for artery clogging lovers only LOL)
