Tuesday's dinner?

We're having enchiladas, rice and beans. I'm not really sure if they are going to be turkey enchiladas or chicken enchiladas, to be honest. I found a bag of shredded something in my freezer and took it out to thaw. I guess we'll see later! It's unlikely my family will know the difference anyway.....

I am trying to pay off two credit cards in the next 30 days, so I have determined to cook as much as possible from the freezer, so I think we'll have a lot of these types of meals, LOL!

I just put some beef cubes in the crockpot w/ cream of mushroom soup and seasonings. I am going to make homemade noodles, and we will have that over mashed potatoes-no carbs there! I think we'll just have a veggie blend as a side.

It's a toss up today.
If DH is up to going to the laundromat tonight we will have:
Veggie italians and chips ......because we can eat that pretty quick then get going.

If he'd rather do laundry tomorrow we'll have:
Spaghetti with veggie "meat" balls....(a new brand) with homemade garlic bread and maybe tossed salad.
(so we can sit down and enjoy without feeling rushed)

Either way we'll have the alternate tomorrow.....I can't wait till the day we can have our own washer and dryer...I actually enjoy doing laundry...but I can't stand the laundromat...or paying at least $10 every week to do it.
The mobile home has hook-ups but the landlord won't permit us to have washer/dryer....they say the water bill will go up to high.....grr........but all well there are certainly worst things to contend with.

McDonald's for us too...well the girls anyways. Or maybe BK....but a drive thru of some sorts. Oldest dd has a choral concert tonight and they requested take-out. Easy enough for me.

I need to make a bunch of potato salad and brownies tonight for a pot luck at work tomorrow, so I need something quick and easy. I have some leftover corned beef, so I'm going to try a reuben casserole recipe I found on recipezaar.

Tomorrow's the last day of school for my kids! I am so glad. Not that it has anything to do with tonights dinner, LOL.
Tonight we're having grilled salmon with a teriyaki marinade, fresh asparagus and fresh corn on the cob. It's all getting put on the grill. So there shouldn't be much clean up for me.

Today is my wedding anniversary, and we were supposed to go out for sushi, but DH blew a tire out this morning, thank God he is ok, but the repair is $782. So I guess we will skip it and eat at home.

I took the leftover chicken from last night's dinner and made a chicken pot pie. Made some chicken salad with the rest for lunch today. Made a Duncan Hines cookie bar for dessert.
