Simple meal here, too. I NEED to spend the majority of the day cleaning this house! I can't remember the last time it had a thorough cleaning!

So it will be sloppy joes, and big tossed salad with blue cheese dressing (I've got all kinds of veggies in the fridge that I want to use up: 2 types of lettuce, red onion, cucumber, carrots, tomatoes, radishes in the garden that are ready to be picked, lots of eggs that I can boil, bacon bits), and the strawberry rhubarb coffee cake that breggae posted earlier this week.

Youngest dd requested Southwest Salad, so that's a good choice since we'll be eating crap tomorrow!

It's a grab what ya can kinda night for us. I'm in the middle of making 300 Jello shooters and need room in the Fridge so I start pulling out all kinds of leftovers.....there's ham/cheese salad, egg salad, tuna salad, chicken salad. There's leftover Taco meat for Tacos or Salads and there's two bags of salad mix that they can make garden or chef's salads. I'm making a sandwich out of chicken salad and throwing back about 10 of those Jello shooters...lol. I'm heading to my buddy's house for everyone to get together to discuss our boating experience tomorrow....lol. We'll have plenty to talk about past boating experiences on the 4th...lol

Not really a recipe - but it's quick & easy & we love it.

It's tortilla chips, romaine lettuce, warmed canned pinto beans, shredded cheddar cheese, chopped tomatoes and green onions...topped with salsa. On a rare occassion we'll add grilled chicken but usually don't.

were watching our calorie intake and we went to the movies and ate pop corn so we opted for just some fresh berries for dinner because the are low in calories and high in fiber! (we saw Handcock, it was pretty good except I felt there was too much cussing, especially for a pg-13 movie)
