Anything cooking tonight???

Is anybody cooking tonight? I just put together a pan of enchiladas using leftover crockpot chicken with black beans and cream cheese. I mixed some of the cream cheese sauce with the shredded chicken, rolled it up in corn tortillas, covered them with the rest of the sauce, and topped them with grated cheddar cheese. I'll shred some lettuce and have chips and homemade salsa with them. And MARGARITAS!!

What's everyone else doing for dinner (I know a lot of you will be eating leftovers).

We had a new recipe - Whole Wheat Penne with Artichoke and Roasted Red Pepper Sauce. It was good. We also had bread, grilled chicken & red wine with it.

I made steak sandwiches and tator tots not too exciting.

I didn't cook tonight, I got a costco pizza. I picked up our first packet of wedding pictures. Wahh his head was cut off in some.

We had grilled pork chops, sour cream and cheddar mashed potatoes and cabbage. I made a Jello No Bake chocolate for dessert. It was suppose to be made into a pie with an Oreo crust and then the chocolate filling. I didn't use the crust and put it into individual cups because the filling was identical to Applebee's chocolate mousse that my oldest daughter LOVES. She likes just the mousse though, no oreo crumbs or crust. That has to be what Applebees uses, the taste is identical!

Sure. We liked it. However, one thing I would do different next time, is it says to blend the sauce until smooth in your food processor. My food processor left chunks of red pepper, I could not get it smooth, so I will use the blender next time. Whole-Wheat Penne with Artichoke-Red Pepper Sauce
Serves 6

2 (14-ounce) cans quartered artichoke hearts, rinsed and drained
1 (12-ounce) jar roasted red peppers, drained
2 tablespoons extra-virgin olive oil
4 teaspoons lemon juice
1 teaspoon dried basil
1/8 teaspoon salt
Freshly ground black pepper, to taste
1 pound whole-wheat penne or other small pasta shape
1/2 cup freshly grated Parmesan cheese (optional)

Bring a large pot of lightly salted water to a boil. Cook the pasta according to package directions, then drain and return to the pot.

Meanwhile, in a food processor, combine the artichoke hearts, red peppers, olive oil, lemon juice, basil, salt and pepper.

Puree until smooth. Set aside until the pasta is cooked.

Add the sauce to the pasta and toss over low heat until heated through. Serve immediately, topped with Parmesan cheese, if desired.

Nutrition information per serving: 416 calories; 63 calories from fat; 7 g fat (1 g saturated; 0 g trans fats); 0 mg cholesterol; 74 g carbohydrate; 15 g protein; 12 g fiber; 644 mg sodium.

Went over to the neighbors for a 5th of July party. There were hot dogs, all kinds of chicken bbq, greek potato salad, greek salad (made by real Greek ppl-just the best food!), baked beans made w/ hot italian sausage which was insanely good. my shrimp and pasta salad, sloppy joes, tortellini salad w/ fresh spinach, cheese, and pepperoni, lots of wine, lots of liquor, and lots of fireworks. Dessert was my giant choc chip cookies and the best bread pudding ever-complete w/ a cream caramel sauce. I don't think I will ever move!!!

We went to my brother's for my brother-in-law's birthday...LOTS of grilling...ribs, steak, burgers & hot dogs! Plus beans, mac n cheese and chips...very rich "fantasy" chocolate cake for dessert...I'm sure I'll never need to eat again.
