I make muffins the easy way, 1 box of cake mix and 1 small can of pumpkin. Mix, spread in muffin tins and bake. My favorites are carrot cake, spice cake, and others along that line, things that you would normally think of for breakfast. But this recipe works for all kinds of cake mix. The muffins are very moist, and nothing can be easier than this! |

Do you make the cake mix per the directions or just mix it dry with the pumpkin? Thanks!

| Buttermilk Oatmeal Muffins
Sorry, my first attempt messed up. Not very good at this. To start again: 1 cup quick-cooking oats 1 cup buttermilk 1 egg, beaten 1/2 cup packed brown sugar 1/4 cup vegetable oil 1 cup flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt Soak oats in buttermilk for 15 minutes. Stir in egg, sugar and oil. Combine flour, baking powder, baking soda and salt; stir into oat misture just until moistened. Filled greased or paper-lined muffin cups three-fourths full. Bake at 400 degrees for 16-18 minutes or until muffins test done. I prefer to get creative with these muffins and add a little cinnamon, nuts and raisins or craisins. Just discovered craisins and they are wonderful. Makes for a very healthy snack. |

I've also found that just about and quick bread (sweet bread) recipe will do just fine for muffins! muffins help me portion control them!

| I was about to be impressed by how short the recipe was! That sounds good, especially with the dried fruit. I like these loaves made in muffin tins. You really should toast the nuts, it doesn't take long, and tastes really good. You can make muffins out of anything! Meatloaf muffins, mashed potato muffins, taco muffins, the typical dessert muffins, we put lots of things in muffin tins.

We are going to the Pitt game on Saturday. I was supposed to bring something for a tailgating breakfast/brunch. I just decided to make some muffins. I made 2 batches, 1 from a lemon cake mix and 1 from a spice cake mix. They are baking now!

My kids love the Dunkin Donuts choc chip muffins. I had posted a recipe request for them here, and people advised me to try the premade mixes. I did, and that is what I use now, the Krusteaz brand. Also, my kids love jiffy mix corn muffins.

I've been looking for a really good Lemon Muffin recipe for years. I've tried serveral but they just need a little something tweaked or something else.. I don't know, I can't put my finger on it... still searching. Thanks for all the recipes on this thread.. they all sound yummy! ![]() X

Grease and flour muffin tins. In a large bowl, cream together the butter and 1 cup of the orange sugar until smooth. Add the eggs and beat until fluffy. Set aside. In another bowl, sift together the flour, baking powder and the soda. Add the mixture to the creamed mixture alternately with the buttermilk, beginning and ending with the flour mixture, and beating after each addition until well blended. Fold in the raisins and orange. Fill each muffin cup 2/3 full with the batter and bake about 15-18 minutes or until a tester comes out clean. Remove from the oven, place the pan on a wire rack and let them cool slightly. While the muffins are still warm, brush the tops lightly with melted orange butter and sprinkle with orange sugar. Serve the remaining orange butter as a spread for the muffins.

| Just put what you would in a taco and put it in muffin tins. I really have no "recipe" per se. I just put meat or rice mixture or both with cheese, salsa, seasoning then put some onion and tomato and sour cream on it before eating.
