I've made a two layer ice cream cake many times and it's really easy. 1 container of chocolate ice cream 1 container of vanilla ice cream chocolate syrup 100 calorie oreo snack packs I let the vanilla ice cream soften and then spread it in either a 13 x 9 pan or round spring form pan. I crumble up the oreo snack packs and sprinkle them on top and then pour on some chocolate syrup. I put this back in the fridge to set up and then I put the chocolate ice cream on top. Let that set up and then take it out of the pan and decorate. Enjoy! |

We attended a birthday party a couple of months ago and they served ice cream filled cupcakes. They were decorated and placed on a tiered serving dish. The cupcakes on the top tier held the candles. It was really cute. The party was for an adult, but I think kids would also like them...plus, no cake cutting!

| Oreo & Fudge Ice Cream Cake
Last Summer the Family Kraft Food & Family Issue came out with an ice cream cake that's won our family over. You can make it any size you desire and it tastes fantastic. We've used it several times now. I'll share the recipe with you and you can decide for yourself. I will print it out just like it was printed in the magazine. We have learned to make it even larger. Here goes: Oreo & Fudge Ice Cream Cake 1/2 cup fudge ice cream topping, warmed 1 tub (8 oz) Cool Whip, thawed, divided 1 pkg (4 oz) chocolate flavor instant pudding 8 oreo sandwich cookies 12 vanilla ice cream sandwiches Pour the fudge topping into a medium bowl. Stir in 1 cup of the whipped topping with a wire whisk until it's well blended. Add in the dry pudding mix, stir 2 minutes or until well blended. The consistency of fudge topping can vary depending on what brand you purchase. If your fudge topping mixture is too thick to spread easily, stir in 1/4 cup milk. Chop the oreo cookies into chunks. Arrange 4 of the ice cream sandwiches, side by side, on a 24x12 inch piece of foil; top with half of the pudding mixture. Repeat the layers. Top the pudding mixture with the remaining 4 ice cream sandwiches. The layers create a neat striped effect when sliced. Frost the top and sides with the remaining whipped topping. It doesn't have to look perfect. Place in freezer for about 4 hours before serving. When ready to serve, let stand at room temperature to soften slightly. Store leftover dessert in the freezer. Makes 12 servings. We made one recently and used 18 ice cream sandwiches. We increased the ice cream topping, used 3 boxes of pudding mix and increased Cool Whip amounts, along with the oreo crumbs. This recipe can be made into any size cake you desire. We served over 20 people and they were impressed with the cake. It's very similar to a Dairy Queen Ice Cream cake, but a lot cheaper. We purchase our ice cream sandwiches at Aldi's along with the other ingredients. Hope this helps you out! |

Regular oreo's do work but I have found that the 100 calorie Oreo's taste more like the crunchies in a Carvel cake and I love their crunches. I usually use a couple packs of the oreo's and just sprinkle to cover the cake. Yes, I do let the ice cream soften and then I put it back in the freezer to set. I've decorated it with cool whip. Usually just a thin layer and then write a message on top. I also decorated it as a basketball court too :} HTH! |

**EASY ICE CREAM SANDWICH ICE CREAM CAKE** INGREDIENTS: 16 ice cream sandwiches 1 (16 ounce) container frozen non-dairy whipped topping 1 (12 ounce) jar chocolate fudge topping, room temperature 1 (1.5 ounce) bar chocolate candy bar, grated DIRECTIONS Place 8 of the ice cream sandwiches side by side in a 9x13 inch baking dish. Spread evenly with half of the hot fudge topping, then half of the whipped topping. Repeat with the remaining sandwiches and toppings. Sprinkle with grated chocolate bar. Cover and freeze for at least 1 hour before serving. Keep unused portion covered and frozen.
