Anybody cooking tonight, or is it just TOO HOT?

I'd love to order a pizza tonight and skip cooking, but I'm cooking anyway ... taking a meal to my parents tomorrow to finally celebrate Easter (and Mother's Day, and Father's Day, and my mother's birthday). Things just kept coming up and we could never all get together (or plans got changed for various reasons). For us tonight, I'm going to cook some chicken quarters. I haven't decided whether to do them on the grill (fewer pans, but it's so HOT out there) or in the oven. We'll have lima beans with it. And I made home-made strawberry ice cream this morning which we'll have for dessert. I can't wait to try it!

Then it's back to cooking for tomorrow. I've already cooked and sliced the ham and baked a lemon cake I still need to make some mashed sweet potatoes, a green bean casserole, and frost the cake.

What's happening at your house tonight?

Linda, you mention eating lima beans every now and then. They're not something we eat.....never took a fancy to them. Do you have any recipes that make them great? Please share!

The girls and I like limas beans. DH hates them! I'm not Linda, but I just steam them, drain them and add butter and salt & pepper.

Youngest dd is finally home from camp! Yeah! I really missed her. It sounds like she had a ball!

We had grilled burgers, french fries & tator tots (oh my, I almost put an i instead of an o - that would have been lovely!), salad & chunks of watermelon and green grapes.

Nope, nothing special. We love them plain. I make them pretty much like Lisa, I just put them in a casserole dish with a little water, hit the veggie button on the microwave, drain them and add some butter, salt, and pepper.

The last few times we've had them they were frozen from last year's garden. I don't think I've ever bought them fresh (although I use fresh ones if we have them in the garden). Normally I buy them frozen. I have bought canned, but they are a little too mushy for me. But I buy almost all of my veggies frozen. Have never really learned to like the canned ones too much (unless they are really on sale, and it's all I have in the house).

I used to eat them covered in ketchup - as an adult I avoid them. I buy my DH frozen ones either plain or in butter.

We eat lima beans occasionally, and I use the frozen ones. I sauté diced onion and minced garlic in a little
olive oil/butter (or bacon grease) add the beans, a little vegetable stock, salt/pepper and cook until the beans
are just tender. If I use bacon grease, I crumble the cooked bacon and sprinkle it over the beans just before
serving. If not, I stir in a little diced fresh tomato/onion/jalapeno tossed with fresh lime juice/olive oil/salt pepper.
