What's for dinner tonight?

I put some country-style ribs in the crockpot this morning with a couple of cans of sauerkraut. I'll make some parsley-buttered red potatoes and green beans when I get home to go with them. What's cooking at your house tonight?

Well since 4 out of the 5 came down with the flu last night, I am pretty sure it is chicken soup and 7-up.

Hey!

Dobratt - hope everyone feels better soon.

Nightflier - is your cilantro rice similar to what they have at Chipotle (assuming you have a Chipotle near you)? If so, how do you make it?

I am going to make a mexican-style casserole with lots of veggies - zucchini, black beans, tomatoes, corn, chilis, etc. It is yummy!

here is my favorite green rice recipe

1/2 cup tightly packed fresh cilantro sprigs (about 1/2 oz.)
1 cup tightly packed fresh stemmed spinach leaves (about 1-1/2 oz.)
1-1/4 cups chicken broth
1-1/4 cups milk
1 tsp. salt
1 Tbs. olive oil
3 Tbs. unsalted butter
1-1/2 cups long-grain rice
1/4 cup finely minced onion
1 clove garlic, minced

Put the cilantro, spinach, and broth in a blender and blend until the vegetables are puréed. Add the milk and salt and blend a bit more until well combined.

In a medium (3-qt.) heavy-based saucepan (with a good lid) over medium heat, heat the olive oil and butter. When the butter is melted, add the rice and sauté, stirring about every 30 seconds, until it just begins to brown, 3 to 4 minutes. Add the onion and garlic and cook 1 minute, stirring constantly. Add the contents of the blender, stir well, turn the heat to high, and bring to a boil. Cover the pan, turn the heat to very low, and cook for 20 minutes. Stir the rice carefully to avoid crushing it, cover, and cook another 5 minutes.


Take the pan off the heat and let the rice steam in the covered pot for 10 minutes. Serve hot.

Since we have a lot to do, go look at an apartment and move stuff out of our current apt we are either doing take out or microwaving frozen dinners. I can't wait for this all to be over with.

Yes, we do have Chipotle here but I have no idea if this is even close to what they serve. I’m guessing
at the amounts, so you may want to adjust them to taste. A neighbor gave the second recipe to me but
I haven’t tried it yet. Do either look close to what you wanted?

1/3 cup vegetable oil
¼ cup fresh lime juice
salt and pepper to taste
¾ cup green bell pepper, diced

1/3 cup scallions, thinly sliced
3 cups cooked long-grain white rice, room temperature
¼ cup fresh cilantro, minced

In a medium bowl, whisk the oil, juice, salt and pepper until well blended.
Stir in the green/red peppers and scallions. Add the rice and cilantro and
toss well to coat.


3 slices bacon, diced
½ medium yellow onion, chopped
1½ cups long grain rice
1½ (14½-ounce) cans chicken broth
¼ cup water
2 Chipotle chiles in adobe sauce, diced
salt to taste
fresh cilantro, chopped
green onions, chopped

In a large saucepan, sauté the bacon and onion about 4 minutes. Add the
rice and stir to coat well. Stir in the broth, water, chiles and salt. Bring to a
boil, cover, lower the heat, and simmer until the rice is tender and the liquid
is absorbed.

Transfer to a serving bowl and sprinkle with cilantro and green onions.

We had a 5:30 baseball game, so I brought hot dogs, chips, and strawberries to the field. (Last night's game ended after 8pm due to a tie and extra innings-but we won). Fortunately, we won again tonight, and it was nice coming home to no dishes. Until about 9:45, when 18yr. old DS asked me to make French Toast. One loaf of bread, six eggs, lots of milk, a carton of strawberries, some powdered sugar, and a can of whipped cream later, four boys were the happiest they have ever been.
