Thursday-anyone cooking?

My dd called this morning and asked what I was doing,I told her I was making supper. On the menu tonight is chicken salad,marinated fresh cucmbers and onions,assorted cheeses & crackers,and a Mandarin Orange jello/Cool whip dessert served with tall glasses of iced tea with lemon.

That sounds like a very refreshing meal Dianne. Ours isn't so light. My oldest requested breakfast for dinner, so we are having scrambled eggs w/ cheese, kielbasa, waffles, and fruit.

My youngest decided she wanted to make dinner tonight. She found a recipe for sloppy joes that sounds kinda Mexican-ny. It uses refried beans as the thickener, has chile peppers in it and is served with sour cream, black olives and shredded cheese. So she's making that and homemade sweet & white french fries.

I'm taking my mom out to dinner tonight. It would have been her 54th wedding anniversary today, my dad passed away 4 years ago. At least he was here for the most awesome celebration of their 50th! I am thinking a big, juicy steak for me!

Wow everything sounds good - I'm watching the Star Wars movies and since the guys of the house are no help with ideas I've made the Executive decision that it will be pancakes.

I have a beef stew thingy with baby carrots in the crock pot. Will serve it over egg noodles and a salad to go with it.

We had grilled pork chops, feta couscous, sauteed spinach and crescent rolls.

There's crumble topped rhubarb muffins for dessert that I made today, if anyone wants one.

How about posting the recipe? What's sweet & white french fries? I've never heard of that one!

It's really hot here so I'm not cooking
we'll have sandwiches, fresh fruit & veggies w/dip, dh wants chips and layered dip too. since he bought me a new a/c unit, I'll indulge him... just this once

hm a lot of this stuff sounds good! I marinated tilapia in italian salad dressing and cooked it on the Foreman grill & warmed up some sweet potatoes. We also got our first tomatoes from dh's garden, they're huge and will make a nice salad.

genichols, till she gets back to answer you, I figure she is talking about regular french fries and sweet potato fries, SP fries are better to me than regular potato fries. Course I maybe wrong, they are served in Alabama, and I thought it was just a regional thing.

Everybody's meal sounds really good to me. I ended up making a shepherds pie and some garlic cheese biscuits.

Sweet & white french fries are just homemade french fries out of sweet potatos and white potatoes. Youngest dd loves sweet potatos.

After I looked at her recipe more closely, it was actually called Sloppy Jose's (not Joes) which would explain the Mexican flair! They were really good! It's out of her cookbook, the Junior Better Homes & Gardens version. Here's the recipe:

Sloppy Jose's

12 oz. lean ground beef
1/2 of a 15 oz. can refried beans
1 4 1/2 oz. can diced green chile peppers
1/2 cup bottled salsa
1 small onion, chopped (about 1/3 cup)
1/4 c. water
1/2 t. minced garlic
6 hamburger buns

Toppings: shredded cheddar cheese, shredded lettuce, sliced black olives, sliced pickles, dairy sour cream

Brown ground beef & drain. Add beans, peppers, salsa, onion, water, & garlic. Bring to a boil, then simmer for 10-15 minutes until mixture is thick and most of liquid is gone, stirring occassionally.

Serve on buns with toppings.

Enjoy!

Thanks for the Sloppy Jose's recipe. That sounds very good, easy and I have the ingredients on hand. I figured out the sweet and white fries. I'm kind of slow sometimes.
