Anyone Cooking tonight - Sunday?

Or, are you all too tired from yesterday! LOL! It's sure quiet in our neighborhood today!

DH decided to fire up the smoker, so he did 2 chickens. I froze one for later. I cooked a bag of frozen mixed veggies and we had brownies left over from last night.

Man, I can't believe how good that chicken was. I can't believe how much different it tastes smoked versus grilled. We just got DH the smoker for Father's Day and this is the 2nd time he's used it. It's awesome. He said he wants to try a brisket next.

I cooked! I made zucchini burritos(my mother in laws recipe),tropical fruit salad and sweet potato casserole here.

We had baked chicken pieces marinated in Italian dressing (I had planned to grill them, but it started pouring right around dinner time) and homemade potato salad. For dessert we had homemade blueberry ice cream, and DH had some oatmeal scotchies with his.

Hey Lisa,

I totally agree! We use our smoker all the time. DH is not a fan of chicken unless it is smoked. We smoke thighs, breasts, etc. Ribs are great, too. However, our favorite is smoking a pork loin. Wow! It turns out SOOOO good. I use the Grillmates pork rub (get it in the spice section) and rub it on after I drizzle with a little olive oil. Add some extra garlic salt and fresh ground pepper and smoke for 4-7 hours (depending upon the size). Let it rest and slice. It is fantastic. Let us know if you come up with any cool recipes. Enjoy!

That sounds good - do you mean a pork tenderloin? We'll have to give that a try. He did ribs the 1st time and they were awesome. For the chickens he made some rub out of a cookbook. It was really good, too. I especially like having no meat pans to wash (but that's the same with grilling!)
