Monday again!!! What's cooking at your house?

I am making a low-cal and fat (supposedly) mexican casserole. I meant to make it last week, but didn't. It's got corn tortillas, 2% cheese, zucchini, black beans, corn, tomatoes, chiles, and onions. Pretty good! I will make an extra one to take to my sister - she's being induced on Wednesday, so need to get quite a few things made for her...

I'm thinking I will make freezer beef stroganoff (taking the sour cream and noodles to add when it is thawed), chili, the mexican casserole, and enchiladas (her DH's fave). I'd like to take one more thing. Any thoughts on something that freezes well?

What are ya'll having?

Congratulations to your sister and her DH !

How about...beef/turkey/chicken potpie, pizza, stuffed bell peppers/cabbage rolls, chicken/beef stuffed shells,
stir-fry or meatballs/sauce/gravy (take rice/noodles), grilled ham steaks/vegetables.

Dinner for us will be...

Pork Chops/Spicy Butter Sauce
Potato Wedges
Broccoli/Lemon Vinaigrette
Peach Melba

I have left over linguine noodles, so I am going to fry up some pepers, onions and chicken and mix it with the pasta. Now to figure out if I should make a garlic butter sauce for it or just open a bottole of rague for some added flavor

I'm making a beer bread sandwich I saw on FoodNetwork last week. It has apples, slices of cheddar cheese and bacon on the beer bread and the whole thing is grilled. I've got lettuce from the garden to add to it.

We are eating leftover smoked chicken from yesterday and I'm making a new salad - "Wheatberry Roasted Corn & Spinach Salad".

Took some chicken (legs,thighs), covered with broccoli/cauliflower (frozen), instant rice and cream of broccoli soup/broccoli cheddar soup. Quick and easy since I'm not feeling too good. At least the DH will have supper when he comes home from work.

Got some peaches if he wants dessert.
