It's Sunday... Did anyone cook this weekend?

I did a little cooking. I made chili yesterday, which turned out pretty good! I put too much red pepper, so I had to add half a large can of crushed tomatoes. DH and I really enjoyed it, though. I also made the pepperocini roast, which we will eat tomorrow night (cooked it all night in the crockpot last night). Today I made egg rolls. I baked them to try to save on fat and calories and, while they weren't nearly as good as fried, they were certainly edible. I need to work on that recipe, though, and see if I can make the baked kind work out a little better....

What did ya'll cook?

Today I put those country style pork for ribs in the crockpot with BBQ sauce, then made a Lipton pasta side, canned peas & cresent rolls. I've never done the pork that way - it was pretty good...just wish it was less fatty.

I was busing sewing on a project for the new baby yesterday so dh made a frozen take and bake pizza and razzed me about it making him ill all day today, lol.
So tonight I made a beef tenderloin roast, garlic roasted fingerling potatoes from our garden and green beans. That should even out the weekend-I hope

Let me think ... what did I make??? Oh yeah, on Saturday we had meat loaf, leftover parsley buttered potatoes, and green beans. Yesterday (Sunday) we had leftover Kalua Pig on hamburger buns, the last few red tomatoes from the garden, and baked butternut squash French fries (which were really very good, by the way).

We preserved all weekend. Did frozen Swiss Chard, frozen chopped green peppers, canned beets, canned apple jam, dried apple slices, and I have apple butter in the crockpot now just about ready to can. We both took the day off to get some more done, but I'm so tired, I don't know that I'll be doing all that much today!

Hey Lisa,

Fatty in the meat or the sauce??? I used to make these and would have the fat all in and around the meat. However, I've been cooking them a bit longer lately and it seems to be pretty easy to just get the meat - the fat just breaks away. Maybe that would help? I also take the meat out and use additional bbq sauce to top it. I don't want all that fat on our meat either.

Both. I trimmed them quite a bit before I put them in. I put BBQ sauce in and cooked them for several hours, then took the meat out, dumped the grease/juice off, put new BBQ sauce on and cooked them longer. I then took the meat out with tongs & a slotted spoon and we were still pulling fat out of the meat when we were eating it. I agree with you, though. They cooked so long, the remaining fat was very easy to remove. Guess that's why that meat was on sale for 99 cents a pound! Great flavor, though!

ETA: We grill them sometimes and that's really good, too, and the fat drips down off the meat, though there's still some in the meat when you eat it.

on Saturday we ordered out...chineese. Yesterday I made a crockpot of chili for lunch and for dinner I made porcupine meatballs, mashed potatoes and mixed veggies.
