What's cooking for Monday?

We are having a pepperocini roast, mashed potatoes, salad, and bread.

I'm trying to do more planning and less spontaneity - so here's my menu for the week:

Tuesday - sloppy joes
Wednesday - salmon
Thursday - out to eat with friend
Friday - frozen pizza with DH prior to movie

I haven't planned for the weekend yet - will depend where we are..

What's cooking at your house?

We're having BBQ beef brisket, homemade coleslaw (I even shredded the cabbage!), homemade potato wedges, and baked beans. For dessert I'm going to make an apple cobbler.

The grocery store I go to had a great Columbus Day Sale today and while I was there I saw they had smoked rotissierrie chickens on sale for $4.99. So I bought one of those for dinner. I am going to make baked potatoes and a veggie to go with it - either frozen mixed or canned green beans.

I'm baking some chicken hind quarters with a bunch of herbs on them. No idea what we'll have with them (but I'm pretty sure mashed potatoes won't be one of the sides, unless DH will accept instant ... and I know there's NO CHANCE of that). I'm absolutely beat! We did another dehydrator of 9 trays of apples, I canned the apple butter, I made 2 apple pies that are in the freezer, and we washed a bunch of green tomatoes (I'm going to try a green tomato salsa tomorrow). The apples in the dehydrator are done, so DH is starting another load that can go overnight. I for one will be in bed right after dinner is done! Doing all this on about 2 hours of sleep is MURDER!

OMG, Linda! That's crazy! I hope you sleep good tonight!

I picked all my green tomatoes and peppers because the forecasters were saying it was going to drop into the upper 20s the night before last. Of course, it didn't so now I have all these laying on my counter. I froze the banana peppers. I guess I'll just wait for the tomatoes to turn red, then freeze them. Ugh! Why do I listen to the forecasters - they're never right!

Well, that's why we have all of the green tomatoes ... we listened to the weathermen but they were right for us. I also have a BIG batch of cayennes sitting on the kitchen counter. There's a few jalapenos (I used most of them earlier this summer for poppers), but I'll use those in the salsa. I want to dry the cayennes and then powder them (but not until we're done with the apples and I'll have to move it out to the garage so I don't asphixiate us and the dog!

I'm sure I will sleep well tonight. I can hardly keep my eyes open. I really should have slept good last night, but I had taken a once-a-month pill for osteoporosis, and it gives me terrible stomach cramps and diarhea. I also had a lot of leg cramps (probably from standing at the kitchen counter all day). So I did take a short walk this evening and I think that will help with the leg cramps.

I finished up some potato soup that I made last week and had a bologna sandwich with it. I have some beef stew cooking in the crock pot so DH can have that when he comes home from work. Figured it would be something nice and warm since it's been pretty chilly here in New England.
