What's cooking on Tuesday?

It's rainy and yucky here... I'm not looking forward to DS' football scrimmage tonight - strange that he likes playing in this kind of weather, but he sure is muddy when we get home. YUCK!

We are having an easy dinner tonight - sloppy joes (will heat up the meat in the crockpot while we are gone) or hot dogs. I'll make frozen french fries to go with it.

What's cooking at your house?

Pizza Casserole

1 - box of fettuccine

1 - 15 oz can of pizza sauce (sometimes I use 1 ½ cans)

1 - 4 oz can of sliced mushrooms

1 - 4 oz can of sliced black olives

1 - pillow package of sliced pepperoni (cut each piece in half)

1 - 12 oz package of shredded mozzarella cheese

Break up the fettuccine and boil until done. Drain and put back into the pot. Add pizza sauce, mushrooms, black olives, and pepperoni and stir. Mix in 8 oz of the mozzarella cheese and stir again. Spread into a 9 x 13 glass baking dish. Add the remaining 4 oz 0f mozzarella to the top. Bake at 350 degrees for up to ½ hour or until the top becomes hot and bubbly.

Serve with garlic bread!

Don't all boys like to play in this weather???

It's cold and rainy here too, I think we need some comfort food tonight. So either homemade chicken and biscuits or homemade chicken soup with a french baguette and maybe a salad on the side.

FYI--be on the look out, Hormel has come out w/ "mini" pepperoni slices. They are about the size of a dime. They would probably work well in this dish!

We make mini pizzas either with English muffins or the pre-made packaged crusts. The mini pepperoni works well with those.

Thankfully, my kids agreed LAST nite on what to have for dinner!
Shake and Bake Chicken
I don't know what sides yet--but probably brocolli or asparagus, and yellow rice. Corn for the youngest.

Leftovers here tonight too.

There's some sloppy joes left that I'll serve over baked potatoes with shredded cheddar and sour cream. That won't be enough for DH, so he can add baked chicken or Kalua Pig. And there's leftover veggies too (at least green beans and butternut squash and a couple of ripe tomatoes).

It's cloudy and drizzly here with rain expected later this afternoon.

I have a ham bone I'd like to get out of the freezer, so I think we're going to have split green pea soup and cornbread.

We're going out with some friends to our summer hangout for a clambake. $12.99 for a dozen, chicken, coleslaw or salad, sweet potato or baked, and corn on the cob. MMMMM!
