Hump Day Dinner - Whats on your Menu tonight?

Tonight we are having Fried Chicken Tenders and Chicken Livers, Mashed potatoes, Corn and Peas.

Not sure what we will have for dessert but I am sure I can come up with something...

We are having the turkey potpie dish that is on the back of the stove top box. It looks yummy we are having that with leftover mashed potatoes and cranberry sauce.

Yesterday at the store they were having a deal that if you bought 10 Lipton pasta or rice sides you got a free rotissierre chicken. So, I did that, brought it home, took the meat of the bones and I'm going to use it tonight to make chicken enchiladas. We'll have chopped lettuce, tomato & avacado with it as well as warmed black beans.

Mmm, I cannot WAIT until dinner tonight!!! This morning Dh got some ground elk from a co-worker who just came back from elk hunting out west. So, I'm making elk meatloaf tonight!! It is going to be so good, my mouth is already watering. I'll serve mashed taters (from our own potatoes that we grew) and a green veggie, just not sure which one yet.

Dessert can be leftover birthday cake.

I found a center cut ham slice with a "use by Oct 19." in the bottom of the fridge so will cook it on the grill tonight,not sure what to have with it as I hate to repeat veggies I've already had the past few days.I don't think we have had butter beans so will probably go with those and marinated cukes and onions.

We went out for mexican last night, so I had to move my menu ahead a day! Tonight was:

Teriyaki glazed pork chops
Fried rice
Snap peas

I don't feel so great (have been sick since Sunday - have a virus and then found out that I have pleurisy today), so I stopped at Target and picked up a rotisserie chicken and Bob Evans mashed potatoes. It was the first time we'd had those pre-made potatoes. I definitely like homemade better, but DS was okay with them.

We had oven fried chicken legs and thighs with a baked buttercup squash. It was the first time I've ever tried butterCUP squash and I thought it was pretty good (although I like butterNUT a little better because it isn't quite as sweet). We've got a lot of them though, so I'm thinking they might be good to use for baking (instead of pumpkin). On the other hand, we have a LOT of pie pumpkins too. We have so many squash in the house curing (in the guest room and living room before we move them to the basement for longer term storage), it looks like DH was planning for some kind of famine this winter.

Any and all ideas for things to do with winter squash will be greatly appreciated!!!
