What can I do with a cooked pork tenderloin?

I don't get these too often and didn't realize there were two pieces in the package. I cooked both and used a recipe from FoodNetwork for a rub and it really wasn't that flavorful. I put the second piece in the freezer and now no clue how to jazz it up to taste better.Help please!! TIA

Use it for hash, fried rice, loaded baked potatoes, pizza or a chopped salad. HTH

Look up emeril green recipes. He did a show with pork loin recipes that looked great. You might be able to use some of those recipes to jazz it up. I like the emeril green show.

Here's a few ideas that might work with pork that isn't very flavorful to begin with:

Slice/chop it, warm it with some barbecue sauce and serve on hamburger buns/onion rolls/etc.

I just used some leftover roast pork in quesadillas with sliced onion and cheddar cheese. They were pretty good ... they'd have been better if I had more "stuff" to add to them (black beans maybe).

I've used pork to make a sandwich spread. Just like chicken salad ... chop it, mix it with whatever you like, chopped onions, celery, salt, pepper, mayo.

Have you ever tried the "Easy Asian Beef Stir Fry" recipe that's been posted here a few times? That would be good with pork and pork flavored Ramen Noodles (if they make that flavor ... I seem to think I've seen them, but I rarely buy Ramen, so I could be wrong).

I printed this recipe for one I am going to make for tomorrow. I saw it on the food channel and it had really good reviews.

Hot Chile Grilled Pork Rounds with Avocado-mango salsa over couscous

dang that's a long name! the recipe is on the food tv site.
