Well, since my freezer bit the dust last week I was busy all weekend cooking up the meat in there so it didn't have to get thrown out. Tonight we are having: Turkey breast/stuffing/gravy casserole and I'll make mashed taters to go with it. Maybe even open a can of cranberry sauce for dh.

I've got Catt's No Peek casserole in the crockpot (altered a little bit of course by adding sliced onions and lots of garlic). I got to work this morning and could not be sure I turned the crockpot on so I ran home at lunch time to make sure it was going (and it was -- wasted trip). We'll have it over noodles. There's chocolate cup cakes for dessert.

I think we are going to have : Pork Chops Baked Potatoes Fruit or Veggie of some sort (maybe apples??) Reminds me that I need to get the pork chops out of the freezer... Oops!

The recipe that cajmom posted is the one I use. I had about a 5 pound sirloin tip roast (they were on sale a couple weeks ago). I used about half of it for beef vegetable soup and the other half for this casserole. So I'm guestimating that I used about 2.5 pounds of beef. I browned the beef in a TINY bit of olive oil along with a large sliced onion and about 4-5 cloves of minced garlic. I dumped that (along with the juices) into the crockpot and mixed in 2 cans of cream of mushroom soup, 1 packet of onion soup, a large (8-ounce) can of sliced mushrooms (drained), and enough milk (I didn't have any wine in the house) to loosen it up. I started it at about 7:45 before leaving for work and it was ready when we got home at around 5:00. All I needed to do was make some wide egg noodles to serve it over (although a green veggie would be nice with it ... I just didn't take the time to make one). It's very similar to beef stroganoff without the sour cream. But I have dumped sour cream into it in the past just to vary it a little. Hope you enjoy it.

| Not too much, luckily...I noticed it wasn't working almost right away. 2 packages of pork chops and a few packages of italian sausage (all from the pig we got last year) was pretty much all we had to toss. Was able to save the turkey, several packages of ground beef, 3 pork loin roasts and a few Schwan's things we had. I'm just glad the freezer wasn't packed.
