Good morning! Up bright and early here as DH had to be at the airport by 5:00. He's going to Memphis until Friday of this week and refuses to park anywhere but at the gate, so I drove him. I hate paying $80 for parking! He's not a morning person, though, so I understand his desire to sleep until the very last second.

Anyway, I've got a couple of packages of ground beef thawing. I'm going to cook them both and use one for tacos tonight. Since DH will be gone anyway, no need to wait until tomorrow. We'll have them tonight. I will make the taco meat before DS' football practice, then put it in the crockpot so we are ready to eat when we get home. I'll go ahead and shred the lettuce and chop the tomatoes, too! I'll refreeze the other cooked meat for a headstart later.

I made beef vegetable soup this weekend to can and I had a quart that didn't seal. So we'll eat that jar tonight and I'm thinking I'll make ham and cheese quesadillas to have with it since I have some tortillas in the fridge. I'm not sure what ham and chesse quesadillas will taste like (certainly not very Mexican), but I really don't think that a quart of soup is going to fill DH up without something else. I made a couple of apple pies and froze them last month when I was dealing with what seemed to be an unending supply of apples. Maybe I'll bake one of those for dessert.

I'm thinking either spaghetti and meatballs with garlic toast or meatball floats. Made the meatballs this past weekend (during my cookfest) so that'll make whichever dinner I choose easy.
