Hump Day... what's cooking?

We're having broiled salmon, rice, and broccoli. DH ended up coming back home last night as he found out he will have to be out of town all of next week. Bummer... my bday is next Wednesday, so we were going to have a nice little dinner. Oh well! Gotta work!!!

I have to tell you guys that I was proud of myself last night. I got up super early yesterday morning (4:00 a.m.), had an exceptionally full day of work, got DS to football practice (which I stay at and watch to make sure his asthma doesn't act up) and knew that I had to go back to the airport to pick up DH at 10:00. So, the point? I really wanted to just stop and pick up fast food on the way home from football (even knowing I had taco meat in the crockpot) because there was still stuff I would have to chop and heat up for dinner (as well as cleaning up after). I resisted!!!! We came home and had our tacos and I was so happy we did! I'm trying to stick with a grocery budget and eat at home, so this was good for me.

Anyway, what's cooking at your house?

I'm thinking parmesean encrusted tilapia tonight, along with a rice side dish (I'll let the girls pick something out) and steamed broccoli.

No idea! We're taking the afternoon off to pick up my dad and go visit my mom in the hospital. Maybe we'll just take my dad out to eat somewhere before we leave for home.

janenga, do you make your tilapia from scratch? My DS loves it, but I usually buy it premade and frozen. I tried making it once from scratch, but we didn't totally dig it.

Thanks. We actually got pretty lucky. She has altzheimer's and just happened to have a doctor's appointment yesterday. They noticed her leg was swollen and found a blood clot. Checked her into the hospital to get some blood thinners into her and monitor her. She probably would never have mentioned it (if she even noticed it).

Nope. I think we got this at Sam's Club, it's not too bad. The girls aren't big fish eaters (altho my little one would eat her weight in fish sticks... ) but this they like.

Linda - I hope everything's ok with your mom! And, you go, Kim!

I was planning to make grilled salmon tonight, but oldest dd decided to have a couple friends over to study for a Chemistry test tomorrow and I'm skeptical about feeding 15-year-olds salmon. So, I'll save that for tomorrow.

Tonight we're going to have grilled burgers, baked fries and fresh green beans. I'm thinking that's a safe bet for teens that I'm not familiar with their eating habits!

I think I am going to cook up some steak and stick it along with some refried beans and mozzarella cheese into a tortilla and grill them.

I would add rice, but DH doesn't like it.

I wonder what I should make as a side item? Maybe I will stop by the store and get some tortilla chips, and have chips and salsa.

And fresh apple slices!

That's the kind we get, too. DS totally loves it and I think it's pretty good, too. I'd love to make it at home, though - just haven't found the right recipes.

Well we ended up leaving earlier than I thought so I sauteed some shrimp in butter, garlic, lemon juice, and hot pepper flakes. We had baked potatoes and brocolli with it.
