It's hard for me to narrow my choice down to one recipe. Our family has several favorites that I bake every year. I will post a few for you. Here goes: Chocolate Crinkles 1/2 c vegetable oil 3/4 c. baking cocoa 2 cups sugar 4 eggs 2 tsp. vanilla 2 cups flour 2 tsp. baking powder 1/2 tsp. salt powdered sugar - approx. 1/2 c. Mix oil, chocolate and sugar together. Blend in eggs, mixing well. Add vanilla then stir in flour, baking powder and salt, mixing well. Chill several hours or even overnight. When ready to bake, preheat oven to 350 degrees. Drop teaspoonfuls of dough into powdered sugar. Roll in sugar and shape into balls. Place on greased baking sheet. Bake 10-12 minutes. Do Not Overbake. Makes about 6 dozen cookies. White Chocolate Macadamia Nut Cookies 3 cups flour 1 tsp. baking soda 1 tsp. salt 1 cup melted butter, cooled slightly 2 cups white chocolate chips OR white chocolate chunks 1 cup coarsely chopped macadamia nuts 2/4 cup sugar 3/4 cup packed brown sugar 1 tsp. vanilla 2 eggs Combine flour, baking soda and salt; set aside. In a large bowl combine butter, sugars, vanilla and beat in eggs. Add flour, baking soda and salt. Stir in white chocolate chips and macadamia nuts. Drop by rounded teaspoonful onto ungreased cookie sheet. Bake at 375 degrees for 8-10 minutes. Makes lots! Hope this helps! Enjoy! |

This is one my family loves. Dipped Pecan Spritz Recipe Ingredients 1-1/2 cups butter, softened 1 cup sugar 1 egg 1 teaspoon vanilla extract 1/2 teaspoon almond extract 3 cups all-purpose flour 1 cup finely ground pecans 1 teaspoon baking powder 3/4 cup semisweet chocolate chips 1-1/2 teaspoons shortening, divided 3/4 cup vanilla or white chips Colored sprinkles Directions In a large bowl, cream butter and sugar until light and fluffy; beat in egg and extracts. Combine the flour, pecans and baking powder; gradually add to creamed mixture and mix well. Using a cookie press fitted with disk of your choice, press dough 2 in. apart onto ungreased baking sheets. Bake at 375° for 5-7 minutes or until set (do not brown). Remove to wire racks to cool. In a microwave, melt chocolate chips and 3/4 teaspoon shortening; stir until smooth. Melt vanilla chips and remaining shortening at 70% power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Dip half of the cookies halfway in semisweet mixture; allow excess to drip off. Place on waxed paper to harden. Dip remaining cookies halfway in vanilla mixture; allow excess to drip off. Place on waxed paper and sprinkle coated area with colored sprinkles. Let harden. Yield: 12-1/2 dozen. |

I'm setting up a cookie exchange again this year and I like to try new recipes. Thanks for sharing, I think I will have to try some of the above. Here is one that I took several years ago and someone usually makes it for the exchange, so easy and so quick Cool Whip Cookies 1 box lemon cake mix (can use any kind but lemon or strawberry are the best!) 1 carton cool whip (8 0z) 1 egg Mix all ingredients together. Roll into balls. Roll in powdered sugar. Bake at 350 for 10-12 minutes. Leave on pan a few minutes before removing. These are also very good. Oreo Balls 1 package regular size Oreos, crushed 1 8 oz. package cream cheese, softened 1 package white almond bark 1 package chocolate almond bark Mix oreos and softened cream cheese. Mix well. Roll into balls. (these are pretty rich, so walnut size balls are about perfect.) Chill about an hour. Melt the almond bark separately. Dip the Oreo balls in the almond bark. Place on wax paper and let set. May drizzle with the opposite color of almond bark for added elegance. (you can also add food coloring to the white almond bark) |

They did such a great job,(http://bcreativeclasses.com/cookies.htm) I hope they do not mind my sharing this photo with all of you. As the season approches my family enjoys the tradition of making the night before Chrismas Mice. It is simple and the children love it. It promotes togetherness and great conversations. We even have some that get really competitive with the decorating gel (racing stripes, tic tac toe, etc.) but we have lots of laughs. While I have other great recipes for cookies, these are the ones that have the best memories attached to them. Simple Christmas Mice 24 Oreo Double Stuff Cookies (remove tops and use bottoms (frosting part) for mice to sit on. 8 oz. chocolate chips (for dipping) 24 Hershey Kisses (unwrapped) 10 oz. jar of Maraschino Cherries (with stems) 1 small pkg. of sliced Almonds 2 small tubes of Decorating Gel (one color for eyes and one color for nose) Drain and pat dry maraschino cherries on a paper towel. Melt chocolate chips (milk choc or semi-sweet) and dip the cherry (not stem as the tail is what you pick it up with). Place mouse body (cherry dipped in chocolate) on the white filling half of the Oreo cookie. While chocolate is still warm, attach an unwrapped Hershey Kiss for the head. Then slip two almond slices between the kiss and cherry for the ears (let chocolate harden a little so almonds stay in place). Give them eyes with dots of gel icing and a nose with gel icing.
