Monday again! What's cooking at your house?

I've been using my crockpot quite a bit lately. I made spaghetti and meatballs in it yesterday and it turned out quite nice....

Today, I'm trying out something new. I have water and onion-mushroom soup in the bottom of the crockpot (about a cup of water), a package of mushrooms, frozen pork chops, and a box of stuffing mix on top of that. I poured another cup to cup and 1/4 of water on top and we'll see how it goes. I found something similar online, but adapted it to what I have/what my family likes. We'll see. I'll serve that with green beans or salad and bread.

What's cooking at your house?

DH is in London for the week and oldest dd is going out with friends tonight, so it's just youngest dd & me. I asked her what she wanted and she said salad (which means romaine lettuce) with sliced apples and grilled chicken and parsley potatoes on the side. Odd combination, but that will work. I'll add some feta cheese & nuts to my salad and we should be good!

I made a roast in the crockpot yesterday with potatoes and carrots, and it came out so good. I have a lot left over so we are having it again tonight. For dessert we have left over brownie pie, which I will warm up and have with ice cream. Here is the recipe for brownie pie

1 pie crust (I used the chocolate keebler one)
1c chocolate chips
1 box brownie mix

Pour chocolate chips into pie crust. Mix brownies as directed and place batter over chocolate chips
Bake at 375 for 30-40 min (until brownie is done)
You can eat it warm like that, but I let mine cool then frosted it with chocolate frosting and decorated it with chopped walnuts, chocolate chips and mini marshmallows

My dinner looks DISGUSTING! NO WAY is my family going to eat that. I'm going to have to come up with something else. YUCK, YUCK, YUCK! I'm disappointed.

I'm waiting for dh to get back from picking up the kids and going shopping; just sitting here snuggling my yummy squishy brand-new baby boy
I've got a beef tenderloin that I think I'll cut into steaks and dh will make the side dishes, either mac & cheese or garlic roasted potatoes, salad, green beans and ginger-honey glazed carrots. I'll have to walk him thru the mac and cheese since he's never made it and I'll make the glazed carrots.
Hubby promised to make me a chocolate malt after the kids are in bed too-- extra calories for the baby, ya know

Everyone's dinners sound yum!

Sexiprincess - congrats on the new baby! How fun is that????

We ended up eating Eckrich smoked sausage (quick thaw from the freezer), mac and cheese, green beans, and garlic bread. I didn't have any BBQ sauce, so I used a BBQ marinade that I got on clearance at Kroger earlier this year. It's called Woody's Cook-In Sauce - BBQ concentrate and marinade. It was really good on the sausage! It's tangy and a little spicy, but different and really good! I would recommend it.

They were fabulous!! They had a little bit of a crunch to them too! He debated using parmesan or the blue cheese, and I think he made the right choice!
