TGIF!!!!! What's for dinner?

I don't know what I'm having - it all depends on what time DH gets home from Memphis. DS is going hunting with my dad, so if DH gets in late, then I will just eat a sandwich or something. If he gets home early, we will probably stop and pick something up on the way to our lakehouse.

I am definitely planning on cooking tomorrow, though! I have some thick pork chops that we will grill.

What's cooking at your house?

DH is getting home tonight from a week in London. So we are making one of his favorite dishes from Macaroni Grill - I found a copy cat recipe for their Pasta Milano that has great reviews. I'm going to make that, focaccia bread, salad and youngest dd wants to make a Welcome Home cake.

It was really good. We all liked it. I only made a 1/2 batch though - 36 oz of pasta? That's a lot of food!

Holy cow!!! Did you see the fat content? 50% of calories from fat...yikes! No wonder it tastes so good

Nope, I didn't even read it. It was for a special occassion so I didn't really care. Now, if we ate like that every night we might have a problem, but we don't. Everything in moderation!

OK, so I went and looked at the nutrition facts and they are totally jacked. I know the percentages would be the same, but it says it makes 4 servings. That is insane! It calls for 36 ounces of pasta! That's over 2 pounds! I made half the recipe. We all ate dinner and probably ate about 2/3 of it. There's quite a bit left over - like 2 or 3 servings. So, even though the percentages would remain the same, the calories and all the numbers would be A LOT lower.

Ok, so DH & I had it for lunch today and there's still another serving left. We're up to 7 off 1/2 the recipe, so it serves at least 14 if you make the whole thing!

Hey,

I've read that you can substitute evaporated milk with cornstarch to thicken it for heavy cream. Do you think that would work in this recipe?

I don't know. It might. I've heard that before, too, that you can even use skim evaporated milk. It would be worth a try...
