It's Monday again.... what's cooking?

I have some thin pork chops and some chicken breasts thawing. I think I will make pork fried rice for dinner and save the chicken breasts for tomorrow.

I made some yummy stuff yesterday, though! I made breaded pork chops (thick cut), stuffing, rice for DS, and some sauteed veggies. The veggies were really good - zucchini, yellow squash, bell pepper, onions, and mushrooms. I just cooked them in a little garlic salt and olive oil. I cooked extra so I could mix it with black beans and leftover rice for lunch today - put that in a tortilla with some salsa and call it good. I will use the rest of it for dinner tomorrow night. I'll chop and cook the chicken breasts, add rotel tomatoes and black beans to the veggies, then layer that with enchilada sauce and monterey jack cheese. Yum!

We're having leftovers here. Yesterday DH smoked a couple slabs of ribs. I'll just reheat them in the oven and we'll have leftover baked beans & coleslaw.

We tried something else last night that was really good. I roasted some garlic cloves in a little bit of olive oil until soft. Then you take bread (we used crusty ciabata bread) and you squeeze the garlic out of the peel onto the bread and spread it like butter. It was really good. Roasting the garlic gives it a slightly sweet taste.

I have a roast in crock pot and will do mash potatoes and gravy. I also have asparagus, cauliflower and some carrots that I am going to roast in oven or grill and some fresh pineapple to cut up. Yum Yum!!

I feel like I spent the whole weekend in the kitchen, so tonight is going to be an easy meal for us! We'll have leftover chicken minnestrone soup, grilled cheese sandwiches, and chips and salsa. There's pumpkin bars for dessert.

I put a roast in the crock pot before I went to bed last night since DH has to work middle shift today. He made a sandwich before leaving. Later on I'll make some mashed potatoes and a veggie of some sort.

We are having sausage and peppers. I have to run to the mall so I was thinking of a pepermint shake from chic fil a for dessert

I made Teriyaki Chicken and Broccoli and put it over Rice..... this was the first time I made it and it was Wonderful!!

that sounds delicious!! A mint shake.....YUM!

Tonight for dinner we are having veggies lasagna, garlic bread, and salad. I love veggie lasagna and have never tried to make it from scratch because it ends up being a lot less expensive to get the Michelangelo's brand that's frozen at Smart and Final with my discount!
