Thanksgiving Menu?

I'm going "home" for Thanksgiving this year and Mom has it all planed what I'm going to make lol.

My sister is doing the turkey and I'll be doing the salmon. I'll also be roasting potatoes and making spinach stuffing.
My Mom totally does it up and we'll have lots of appetizers also. I'll make deviled eggs, wrap prosciutto around crispini and cut up tons of cheese.

DH will be home alone this year. He is looking forward to spending most of the day fishing then will join our neighbors for a deep fried turkey dinner.

It's only going to be me and my boyfriend this year. We usually have his neices and nephews, but due to family drama I get a break this year. (I have to admit as much as the kids drive me crazy, I will miss them) So since it is just two of us, and my oven is small and a turkey won't fit in it, I am planning on making a turkey breast, mashed potatoes, stuffing, a veggie and cranberry sauce. For dessert I will make a pumpkin pie and a dutch apple pie

Hey would you please share your recipe for the spinach stuffing.
I've been trying to figure out ways to "sneak" more green in the kid's diet.

I make stuffing/dressing the whole year through, not just Thanksgiving, so this might be an option for us.

My family loves the classics on Thanksgiving so it's not going to be real different or real difficult. Bummer huh? That and because of the milk allergy we do things a little off track than everyone else's Creamy, Dreamy pies/cakes/puddings etc. Just made a pecan pie yesterday because everyone was saying at lunch... "I can't wait til Thanksgiving, it's going to be so good" so I surprised them by running to the store for ingredients and popping one in the oven last night. It was good and after lunches I think there's barely a morsel left! LOL

I don't know if it will be very sneaky as it's obviously spinach. I take spinach and mix with garlic (either grate or dice), egg, and lots and lots of cheese. I personally like adding cream cheese with shredded Italian cheeses but Mom will nix the cream cheese. Then bake in a pan for about 20-30 depending on how big of a pan you make and how crispy you like the top. And you can put onions in too if you like but we don't.

As far as sneaking try putting mashed sweet potatoes into mac n cheese and using canned pumpkin in place of eggs and oil in cake mixes. You can just mash the spinach but unless you're making something green trust me they will notice!

That sounds so insanely delicious, but I'd have to eat the whole thing all by myself (which of course I do not have a problem with, but my waistline will)

The no milk (no cheeses) thing ex-nays it for the kiddos but I do appreciate you sharing a fabulous dish!

You could use Panko crumbs instead of cheese but put in something to make it moist.
