Hump Day dinner

Hope you all are having a great day!! It's a little misty here today, but at least it's not that dark rainy type of day!

What are you all serving tonight? I've decided to go with lasagna, since I already have the ground meat/pork precooked! I'll add garlic bread and a side salad to it, also.

It's another rainny day here. Tonight we are having sirloin steaks and chipolte ranch pasta salad.

It's just me and DS tonight, but I'm going to bake a whole chicken. We'll have that with caesar salad, broccoli, and rice.

This is how I make my chicken and it turns out GREAT:

Preheat your oven to 500. Rinse and pat the chicken dry. Rub the outside with sea salt and put a little in the cavity (I have no idea if that makes a difference, but I do it). I put it in a cast iron skillet. Drop the temp down to 450 and bake for about an hour, until the juices run clear. The chicken is super moist, but the outside is crispy.

For steamed broccoli that still stays crisp - I use the Pampered Chef microwave micro cooker. I have attached a picture here. The broccoli comes out perfect - not squishy at all. The Pampered Chef, Ltd.

I just sprinkle a little garlic salt and pepper on the broccoli. Sometimes I will also add a sprinkle of parmesan cheese, too. Yum!

I have a box of the Velvetta cheese dinners that calls for 1 lb of boneless chicken breast and we are going to try that. I will serve it with spinach salad and a veggie of some type.
