It's just me and DS tonight, but I'm going to bake a whole chicken. We'll have that with caesar salad, broccoli, and rice.
This is how I make my chicken and it turns out GREAT:
Preheat your oven to 500. Rinse and pat the chicken dry. Rub the outside with sea salt and put a little in the cavity (I have no idea if that makes a difference, but I do it). I put it in a cast iron skillet. Drop the temp down to 450 and bake for about an hour, until the juices run clear. The chicken is super moist, but the outside is crispy.
For steamed broccoli that still stays crisp - I use the Pampered Chef microwave micro cooker. I have attached a picture here. The broccoli comes out perfect - not squishy at all.

I just sprinkle a little garlic salt and pepper on the broccoli. Sometimes I will also add a sprinkle of parmesan cheese, too. Yum!
