GOOD MORNING! Hope you all had a fabulous weekend!

What are you all planning on serving tonight?

DH has volunteered to make his Hungarian soup, with our homemade noodles! Gotta love'em...he knows how crazy I am this week with all the preparations and preparing for a weekend trip with my son!

I defrosted some eye round steaks, I am just not sure what I am going to do with them yet. I was thinking of simmering them in a can of french onion soup and serving over egg noodles or mashed potatoes with some sort of veggie on the side. Or cutting them into cubes and making a beef fried rice.

for dessert I am going to bake a batch of chocolate cupcakes

We are having homemade chicken and noodle soup.

I was going to make it last night, but oldest dd is taking Culinary Arts in school and had an assignment she wanted to get done. She had to make plan, prepare and clean up dinner. She made Whole wheat spaghetti, Ragu sauce w/ hamburger, garlic bread, green beans and a blueberry/pineapple dump cake. It was really good!

I am making homemade mac & cheese, a Gortons grilled lemon pepper fish fillet for Dh and green beans.

It is another dreary rainy day here so we can use some comfort food!

We are having grilled tuna steaks, some sort of pasta or rice, broccoli for DS and sauteed spinach for me and DH.

I was at a conference last Thursday, Friday, and Saturday and definitely was tempted a little too much! With Thanksgiving this week, too, I need to be kind of good.
