Christmas Eve and Christmas Day dinners...what are you serving?

We'll be hosting DH family. So far, we have 17 coming with 4 we're still waiting to hear from. I'll be serving:

Appetizers;
Spinach artichoke dip in a pumpernickel bowl
Shrimp with cocktail sauce
Franks buffalo chicken dip


Dinner;

Standing rib roast
Honeybaked ham
French onion soup
Corn souffle
CB Hashbrown casserole
Green beans almondine
Tossed salad
Sourdough dinner rolls (from a local bakery)

Dessert (I am making these, while my MIL is bringing "something!")

Caramel macchiato cheesecake
Lava cake


For Christmas day, it sounds like it'll just be the 4 of us. I'll make;

Blue cheese crusted filets
Lobster tails
Leftover french onion soup (hopefully!!!)
Homemade twice baked potatoes
Tomato salads
Veggie medley

Dessert; unsure yet!

Dh works Christmas Eve. Christmas Day he'll sleep while I make everything.

Appetizers: Strawberries stuffed with herbed cheese and deviled eggs.

Dinner: Baked ham, grilled salmon, sweet potatoes with brown sugar, marshmallow fluff and pecans, spinach and cheese stuffing, home made crescent rolls with butter, and cranberry sauce (I've made it in the past and it's delicious but this year I was nostalgic for Ocean Spray with whole berries).

Dessert: Pecan pie with vanilla ice cream and whipped cream along with my sugar cookies and fudge which I will be making Wednesday, Thursday and Friday.

It might not sound like a lot but there will only be two of us so it really will be a big feast!

That sounds like a lot, Anna with only 2 of you!! And, thanks....now you have craving pecan pie!! I just may have to make one, too!

lol I hope I can make a good crust this time. I'm considering buying a crust from a bakery as the good tasting ones in the store have lard and the ones that don't taste like ...well you know.

I have no idea what we are having yet. We actually celebrated yesterday with my dad, step-mom and brother and his family. We went out to dinner to a diner, not your typical place for a holiday dinner, but it's one here in PA that my dad likes and it was his choice.

Yesterday when I went to Safeway for some fresh salmon I picked up some stuffed scallops and stuffed clams to add to appetizer part of our dinner. Well actually we'll probably have the "appetizers" for lunch and then dinner later. I boiled the eggs today for the deviled eggs so they can be peeled and mixed tomorrow which will make them perfect for Sunday.

I didn't get a chance to practice my crescent rolls but Xhausted sent me a link to a recipe that has a photo for each step of the way so hopefully it will work out!

I'm looking up recipes for the glaze for the ham right now to find something my husband will like. I'm thinking brown sugar a bit of soy sauce and some other things.

OMGOSH, Anna....stuffed scallops?! That sounds wonderful! What are they stuffed with? I might have to buy some for New Years and try that!!

It's a stuffing mixture and I've had them before. You put them in at 350 for about 35 minutes and they come out crispy on the outside and nice and soft and delicious on the inside. Do you have a Safeway by you? I wonder if they have them that far from the coast? Here is a picture I found online

Right now they are only $1 each and pretty big.

How did your dinner(s) go? Our were delicious! We basically had a dinner of appetizers on Eve and yesterday had the big dinner. The crescents turned out delicious (thanks Exhausted) and the leftover dough was used to make biscuits this morning. I toyed with making cinnamon rolls with some of the dough but we had already pigged out enough!
