Mondays dinner

Well, back to the daily grind of cooking here! We had such a great holiday season that I almost hate to see it end!

So, to get back in the routine here, I'm making a recipe requested by oldest DS; Marzetti® Buffalo Blue Cheese Chicken Panini Recipe - Allrecipes.com These never disappoint! I served them with celery and carrot sticks and chips. Easy enough while I put all the Christmas stuff away!

What did you all make?

We're trying a new recipe for a Beef-Barley Stew. It really smells good!

I'm going easy tonight (made a turkey breast and all the trimmings yesterday). I had made and canned beef vegetable soup last fall, so I'm heating up a quart of that. I bought 2 shrimp rings (with cocktail sauce) for New Year's Eve, but we never ate them, so we'll have those. Yes, they are SUPPOSED to serve 2 people each, but with shrimp cocktail ... I don't think so! And we have chili cheese dip and tortilla chips left from New Year's Eve too. We'll have that as well.

I don't really think that's a terribly well-rounded meal, but its easy, has meat, veggies, dairy, and grains, so I'm going with it!

I cooked salmon for the first time tonight. I had mine topped with wilted spinach, DS had his topped with homemade salsa, and DD had hers plain. I had a baked sweet potato, the kids had regular baked potatoes, no toppings. I had steamed mixed veggies and the kids had raw veggies. We'll be cooking salmon again, we all liked it!

We had venison chili and boxed mac and cheese. Easy!
