Tuesday Dinner

Good Morning
It's a rainny day here in PA. What's for dinner at your house? I am making a chicken potpie that is topped with refrigerated biscuits. It's quick and easy to make and taste like I spent hours in the kitchen

It's raining here too mixed with a little snow. DH is having leftovers and I will have something that I pick out when I go shopping today.

It is cold here today. We are having chili, saltines & shredded cheddar cheese. I'll probably add some carrot sticks, too.

It has been snowing all day here. I would have liked to make some type of comfort food, but I've been baking bread and cooking pumpkins most of the day. So we are having something relatively quick:

Crunchy Mustard Cod
Spinach Mashed Potatoes
Tossed Salad with Marie's Blue Cheese Dressing

Never got my pumpkin bars made, so I guess dessert will be ice cream. That doesn't sound right on a snowy day, does it. How about if we have it with hot chocolate????

We bought a turkey this year at fair in September and decided it was taking up WAY too much room.....it was 32 pounds!! Anyhow, we cut it in half this morning. DH smoked half of it in his new smoker and I roasted the other half (for casseroles later). The smoked part was INCREDIBLE!! I served it with BBQ sauce, onion rings, baked beans and garlic bread.

try this recipe sometime for smoking turkey-

This wet rub is perfect for turkey. The combination of flavors with a touch of acid carry these herbs into the meat. Make sure you get the rub under the skin to get the flavors to the meat.
Prep Time: 10 minutes

Total Time: 10 minutes

Yield: Makes about 3/4 cup

Ingredients:

1/4 cup olive oil
1 tablespoon Worcestershire sauce
1 tablespoon white wine
1 tablespoon balsamic vinegar
4 teaspoons fresh rosemary, chopped
4 teaspoons fresh thyme, chopped
4 teaspoons onion, minced
4 teaspoons garlic, minced
2 teaspoons salt
Preparation:

Combine all ingredients and mix well. Store in the refrigerator in an airtight container.

Thank you!! I've printed it out for DH, since he's really into this right now!! My grocery list for tomorrow consists of; "rack of ribs, pork loin, sausage links, and roasts for jerky". Unfortunately, not one of these items is in our freezer!! You'd think *one* of them would be, living on a farm!!!

I'll let you know once we try it!!
