Friday night dinner, anyone?

Did everyone go out tonight? We were out most of the afternoon and now it is snowing like crazy. Tonight I'm just heating up some leftover pork roast. I had made a bunch of twice baked potatoes and froze them, so I put a couple of those into the oven. And we'll have green beans. For dessert, there is most of a loaf of banana bread (also out of the freezer). So pretty easy for me. Anyone else cooking?

I had planned on a simple easy dinner...breakfast. But a friend of ours stopped by so instead of breakfast we ordered our free pizzas from Papa Johns from their coin toss promotion.

It was just DH & I. We just had grilled cheese & canned soup.

Have you ever tried avacado slices on grilled cheese? We were talking about avacados being in season and someone suggested that, so we did that last night. It was really good.

Lisa- that sounds SO good!! I <3 anything with avocados! Matter of fact yesterday we had a late lunch out, so for snacking last night, I made DH and I a black bean salsa w/ avocados that was really good! I cannot get enough of them this time of year, either. Someone actually told me you could freeze them once they have been seeded. Have you ever done that?

No, I've never even thought about freezing them. I should buy one while they're still on sale and try it.

Another idea I heard and we've had twice now that's really good (and much healthier) is to make tuna (or chicken) salad the way you normally would, but substitute mashed avocado for the mayo. YUM!

I made tuna casserole. I've been on WW for three weeks so I split in four and put three in the freezer for lunches at work next week and had one fourth for dinner with a little three cheese Italian sprinkled on it. DH worked so he just had a packed lunch the same one he likes every night: sandwich, three pieces of fresh fruit, two little cups of fruit, cut up celery, and water.

I have frozen mashed avocados in the past and used them for guacamole. They tasted just fine. I think I better pick some up too and get them into the freezer!
