Share your favorite Weight Watchers recipe

My favorite is this one that I found on Dotti's website:

Crockpot Enchilada Layered Casserole

1 medium onion, chopped
1 green pepper, chopped
1 lb 93% lean ground beef
Cook onion and green pepper in non-stick skillet over medium heat until translucent, stirring constantly. Add ground beef and stir until cooked.
Add 1 15oz can diced tomatoes with mexican seasoning, UNDRAINED
1 teaspoon chili powder
1/2 teaspoon cumin
1 15 oz. can ranch beans (or chili beans or dark red kidney beans), undrained
1/2 to 1 small can tomato sauce
Cook on low for 10 minutes, until piping hot. Sauce should be like a thin spaghetti sauce consistency.
Spray with Pam the inside of a 3.5 quart crockpot. Layer the following in this order:

3/4 cup sauce mixture
1 fat-free flour tortilla
1/3 cup reduced fat Mexical Cheese, grated

Make 6 layers, ending with cheese. Pour any sauce remaining over the top.

Cook 6 hours on low. Total recipe has 41 points. It is supposed to serve 6, but I usually find it serves 10, which makes it 4.1 points a serving.

This one is requested by my WW friends and nonWW alike.

Taco Soup

1 lb ground meat- beef or turkey
1 onion chopped
1 can kernal corn
1 can 15 oz chili beans
1 can 15 oz kidney beans
1 small can 4 oz diced green chilis
1 can diced tomatoes
1 can 16 oz tomato sauce
1 cup fat free refried beans
1 envelope ranch dressing mix
1 enevelope taco seasoning mix (low sodium)
11/2 cups water

Brown meat with onion and drain. Add remaining ingrediants, do not drain cans. Use all liquids. Simmer for 30 minutes.
1 cup=3pts.

Mine is the cupcakes made with the canned pumpkin. I got the receipe from here, I think they are 2 pts.

1 box chocolate cake mix
1 can pumpkin

Mix together, I added a little bit of water to mine. bake according to box directions. I also topped mine with 1 T of fat free cool whip
