New Potatoe Ideas for Large Group

I have volunteered to make a potatoe dish for Christmas Dinner for a very large group. Now I'm not sure what to make. Does anyone out there have any ideas. Have thought about getting red potatoes and cutting into large cubes and then coating with something and baking on cookie sheet. Just can't think of what to use as a coating. Any ideas would be grately appreciated. Debbie

I like potatoe slices lightly coated with olive oil and sprinkled with Rosmary, garlic powder and or Italian seasoning and baked on a cookie sheet. (also great way to do whole green beans and slices of pepper)

Toss them with a little olive oil/salt and pepper and season with rosemary, thyme; (fresh or dried),
minced garlic, shallots, Italian parsley, Italian seasoning, etc. You could also roast some carrots
and small whole onions with them.

If you want them a little spicy toss them with paprika, chili powder, cayenne pepper, cilantro, etc. HTH

We like them lightly coated with olive oil then tossed with dry Ranch dressing and roasted until tender. The kids tear through them, they're really yummy.

Whatever you do, roast them on a pan lined with aluminum foil or you're likely to lose part of your potatoes trying to get them off the pan.

You can drizzle them with olive oil and cut fresh herbs and some coarse sea salt.

Or you can dig them out, mash them with butter, cheese, sour cream, put them back in the shells, bake again for a few minutes and top with green onions for twice baked potatoes.

Member Mazirene has a great recipe- I believe it's called greek potatos- perhaps if she checks in she can share it again- I can't find it.

I coat cubed potatoes with a paste type vegetable base (like bouillon). People always ask for the recipe.

I have to try those ranch ones that danas mom mentioned....sounds yummy!
