Recipe idea

I am looking for a "carb Conscious" recipe for a side dish for christmas dinner. We re having ham, sweet potatoes,relish tray but I am looking for one other dish. But I am not doing many carbs so the traditional potato and macaroni salads are out.
Any ideas??

Maybe a cooked veggie would fit in nicely?

We always do the frenchcut-style green beans with butter and almonds or cut green beans with bacon and beef bullion....

What is your main course/meat?

How about roasted asparagus or Brussels sprouts? Trim them toss with a little olive oil,
Kosher salt, pepper, fresh/dried Italian or Greek herbs and minced garlic/shallots, then
roast at 400* degrees until tender (do not over cook). HTH

steam a veggie like asparagus or broccoli. I make a sauce of mayo, garlic powder, a little lemon juice and yellow mustard - this can be served on the side.

I make a great dish that everyone (even those not watching their carbs) requests. I have even been asked to bring it to Christmas eve dinner at my mother-in-laws. You make potato salad just like you normally would, only use cooked cauliflower instead of potatoes. Just boil the cauliflower and drain it very, very well and then cool. Cut the flowerettes up into bite size pieces and add onion, relish, celery, boiled eggs, salt and pepper and mayo.

Broccoli Salad

Sorry I don't use measurements just go by taste.

Broccoli Florets (raw)
Mix with sour cream and dry ranch dsg. mix
add chopped red onion (optional)
add shredded cheddar cheese

Mix all together and chill. EASY, EASY!!
