How about roasted asparagus or Brussels sprouts? Trim them toss with a little olive oil, Kosher salt, pepper, fresh/dried Italian or Greek herbs and minced garlic/shallots, then roast at 400* degrees until tender (do not over cook). HTH

I make a great dish that everyone (even those not watching their carbs) requests. I have even been asked to bring it to Christmas eve dinner at my mother-in-laws. You make potato salad just like you normally would, only use cooked cauliflower instead of potatoes. Just boil the cauliflower and drain it very, very well and then cool. Cut the flowerettes up into bite size pieces and add onion, relish, celery, boiled eggs, salt and pepper and mayo.

Broccoli Salad Sorry I don't use measurements just go by taste. Broccoli Florets (raw) Mix with sour cream and dry ranch dsg. mix add chopped red onion (optional) add shredded cheddar cheese Mix all together and chill. EASY, EASY!! |
