Smile What Are You Having For Christmas Day Breakfast/Brunch?

What is everybody making for Christmas Day breakfast or brunch? I want to try something different and need ideas, so include recipes please. I hope everybody's holiday preparations are going well. I still have a bit of cleaning and decorating to do, as well as baking. Merry Christmas, Happy Kwanzaa, and Happy New Year, and for those of you who celebrated Hannukah, I hope that you had a beautiful and peaceful holiday with your families!

Breakfast Casserole
1/2 pound spicy or mild pork sausage
1 medium onion, chopped
4 cups frozen diced hash brown potatoes, thawed (about 16 ounces)
1 1/2 cups shredded Monterey Jack or Cheddar cheese
3 eggs, beaten
1 cup milk
1/4 teaspoon pepper
mild salsa, optional
PREPARATION:
In a large skillet, cook sausage and onion, breaking up sausage with a spatula. When sausage is cooked through, drain off excess fat.
In an 8x8x2-inch square baking dish, layer the hash brown potatoes, half of the shredded cheese, browned sausage and onion mixture, and remaining shredded cheese.
In a bowl, combine eggs, milk and pepper; pour egg mixture over cheese.
Bake, covered, in a 350° oven for 45 to 55 minutes or until a knife inserted near center comes out clean. Transfer casserole to a wire rack and let stand for 10 to 15 minutes.
Cut into squares. Serve with salsa, if desired.
Serves 6.

I made this with the hashbrowns that have onions and bellpeppers added. It was great!

I'm baking some store made polish sausage. Making scrambled eggs. I have a melon and an assortment of store bought sweet rolls. Juice. Easy, as I have an afternoon family gathering to prepare for.

Breakfast casserole, Cinnamon rolls (safe ones for the kids), orange balls, juice, coffee, and chocolate milk for Ms. Claus!

Skiers French Toast
2 tablespoons light corn syrup
1/2 cup butter
1 cup packed brown sugar
1 (1 pound) loaf unsliced white
bread, with crust trimmed 5 eggs
1 1/2 cups milk
1 tablespoon vanilla extract
1/4 teaspoon salt

Combine light corn syrup, butter and sugar in saucepan; simmer until syrup-like. Pour mixture over the bottom of a 9"x 13" pan. Beat together the eggs, milk, vanilla, and salt. Pour over bread. Cover with saran wrap. Refrigerate overnight. Bake in a preheated oven 350 degree F (175 degrees C) for 45 minutes.

I'm going to substitute the milk with egg nog!

I made Raspberry Chocolate Chip scones for our breakfast tomorrow. Kids requested it, so... I accomodated them!

They're super easy to make and will taste awesome. I just pop each scone in the microwave for about 12 seconds and they will taste warm and soft, delicious. Coffee, milk and juice to go with it.

The kids won't eat more than that anyway, as they'll be anxious to go play with their new stuff. I don't have room in the frig to make an overnight casserole anyway, as it will be full of stuff for our dinner tomorrow.

I can post the recipe if you want, it only takes less than 10 minutes to make and you're good to go!

I always worry about soaking bread overnight, but this was FABULOUS!!

Grand Marnier French Toast

8tbs Butter
1c. Brown Sugar
2tbs Corn Syrup
1 Large loaf Hallah bread
5 Large Eggs
1-1/2 C Half & Half
1Tbs Vanilla
1Tbs Grand Marnier
1/4tsp Salt
1/2tsp Cinnamon

Melt butter with brown sugar and corn syrup over medium heat, stirring until smooth. Pour into 13x9 pan. Cut bread into thick slices and lay them in a single layer in brown sugar mixture (you'll need to squeeze them in).

Whisk together eggs, half and half, vanilla, Grand Marnier, cinnamon, salt. Pour over bread. Cover and refrig overnight.

In the morning, bring bread mix back to room temp. Bake @ 350 uncovered for about 35 minutes.

We love scones-they are so easy to make, I will never buy store bought again, so please post your recipe. The different French toasts and casseroles that people posted sound yummy-I know I will probably make more than one thing for breakfast, lol! Thanks for all of the great recipes! I found a recipe for cinnamon buns made from crescent roll dough-has anyone ever tried these?


Sticky Cinnamon Buns

You begin by making these sticky buns with store-bought crescent rolls.
INGREDIENTS:
1/4 cup butter
1/4 cup chopped nuts (pecans, walnuts or hazelnuts)
1/4 cup firmly packed brown sugar
2 tablespoons maple syrup
8 ounce can crescent rolls
1 tablespoon sugar
1/2 teaspoon ground cinnamon or freshly grated nutmeg
PREPARATION:
Preheat oven to 375 degrees F. Lightly grease 9-inch round cake pan. Place
butter and nuts in pan. Heat in oven for 2 minutes. Remove from oven. Stir
in brown sugar and syrup. Spread mixture evenly in bottom of pan.
Remove dough from can, but do not separate or
unroll. With a serrated knife, cut into 6 large or 12 small slices.
Combine sugar and cinnamon in shallow-sided bowl. Dip both sides of dough
in sugar mixture. Evenly space rolls in pan. Sprinkle any remaining sugar
over top of rolls. Bake for 17 to 20 minutes. Cool for 1 minute. Place
plate upside down over pan. Invert pan and plate onto serving platter.
Spoon any remaining drippings over rolls. Serve warm.

The zucchini bread is already made and frozen. I also have an apricot brandy bread made (recipe's on paper, not the computer). I'll make the scones fresh tomorrow.

Also, fruit salad, juice, coffee and of course, COOKIES!



Chocolate Chip Scones
2 c. all purpose flour, plus more for work surface
5 T. sugar, plus 1 T. for topping
1 T. baking powder
½ t. salt
6 T. chilled unsalted butter, cut into small pieces
2/3 c. half-and-half, plus 1 T.
3/4 c. chocolate chips (mini chips work best but not necessary)
Preheat oven to 425 degrees.
In a bowl, whisk together flour, 5 T. sugar, baking powder, and salt. Cut in butter with a pastry blender until mixture resembles coarse crumbs. Stir in 2/3 c. half-and-half until just moistened. Gently fold in chocolate chips.
On a lightly floured surface, knead dough gently, 5 to 10 times. Pat into a 1 inch thick round. Cut into 8 wedges; place on a baking sheet, 2 inches apart. Brush tops with remaining tablespoon half-and-half; sprinkle with remaining tablespoon sugar. Bake 12-15 minutes. Let cool on a wire rack.
Makes 8 servings

Extra Special Zucchini Bread
3 eggs
2 C. sugar
1 C. oil
1 tsp. vanilla
8 oz. cream cheese
2 C. flour
1 tsp. soda
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
1/2 tsp. nutmeg
2 C. chopped walnuts
2 C. shredded zucchini
Heat oven to 350. Grease and flour two 9x5 pans or seven 5x3 pans.
In large bowl beat eggs, sugar, oil and vanilla until smooth. Beat in cream cheese.In a large bowl, whisk flour, baking soda, baking powder, cinnamon,salt and nutmeg. On low speed, gradually beat into the egg mixture. Fold in walnuts and zucchini. Evenly divide batter between the two prepared pans or the seven smaller pan. Bake at 350 for 60 mins. for the large size, or 35 minutes for the smaller loaves or until a toothpick inserted in the center comes out clean. Remove from oven and allow to cool in pan for 10 mins. on a wire rack. Turn out of pans and allow to cool completely.

Breakfast Casserole

12 slices white bread
1/4 c butter, softened
1 lb sausage
8 oz cheddar cheese, shredded
4 eggs
3 c milk

Trim crust from bread, spread lightly with butter. Arrange 6 slices butter side up in a greased baking dish. Brown sausage in skillet, breaking up pieces until it's crumbly and no longer pink; drain fat. Layer half the sausage and cheese over the bread. Add remaining bread, sausage and cheese. Beat eggs with milk in a bowl and pour over casserole, pressing until milk saturates all layers. Chill overnight. When ready to bake, preheat oven to 350 degrees. Bake for 45-50 minutes or until set and golden. Serves 8

Preheat oven to 425 degrees. Lightly grease a large baking sheet, set aside. In large bowl, combine first 4 (dry) ingredients. With pastry blender, cut in Crisco until mixture resembles coarse crumbs. In measuring cup, combine milk, egg and vanilla. Add to dry ingredients along with chocolate chips. Stir just until mixture clings together and forms a soft dough.

Turn dough onto lightly floured surface and knead gently 5-6 times. Pat dough into a 7-8 inch circle. Cut into 6 wedges. Place scones 1 inch apart on baking sheet. Pierce tops with the tines of a fork. Bake scones for 15-20 minutes or until golden brown. Do not over bake!

* I used the new Nestle swirled morsels, raspberry and dark chocolate flavored. They turned out amazing! But if you just have plain chocolate chips, that would be terrific as well.

** Put scones in microwave for 10-15 seconds to re-warm. These also freeze wonderfully.
